I love chicken too! It’s a weeknight staple, but I’m always looking for new ways to enjoy it. (Who wants to eat the same thing every night? Not me!) Here are some of my favorites…

Chicken Rollups

They only look fancy.... Chicken rollups are the dinner upgrade you’ve been missing! Just pound the chicken breast to an even thickness (or start with store-bought cutlets, which are nice and even), add your tasty fillings, and roll it up. Then top, bake, and enjoy...



No-Cook Creations

Enjoy a weeknight chicken dinner without turning on the oven. Cook up a batch of chicken over the weekend (check out these tips for perfectly cooked chicken), or grab a bag of precooked chicken from the supermarket. Then use it throughout the week for salads, stir-frys, and more. You got this!



Foil Packs & Sheet-Pan Meals

Healthy protein + easy clean up = dinner winners. Heavy-duty foil and baking sheets are life-saving weeknight cooking tools! You can toss the foil when you're done, cutting your dishwashing time in half. If you’re not using foil, spray your baking sheet with nonstick spray so it's easier to clean!
