Hi Hungry Girl,

I just purchased 300 Under 300 and I especially love all of the Mexican dishes! However, I'm not a fan of frozen ground-beef-style soy crumbles. Can I substitute ground turkey instead? Will this increase the amount of calories by a lot? Thanks for your help!

Hi Skipper,

Glad to hear you're enjoying the latest HG book! Those soy crumbles (made by Boca and MorningStar Farms) are great because they're low in fat and calories and incredibly convenient; they're basically ready to use right out of the package and perfect when you don't need a whole pound of crumbled meat. But I understand that they're not for everyone. Luckily, it's super-easy to substitute ground turkey or beef. Use 4 oz. uncooked meat for every cup of frozen soy crumbles called for in a recipe. You do NEED to cook the ground meat before adding it to the recipe, so cook and crumble it on the stove in a skillet sprayed with nonstick spray. For ground turkey, I suggest going with the lean kind (at least 93% fat-free). Extra-lean is a little dry and just doesn't taste as good. Look for lean ground turkey with about 160 calories and 8g fat per 4-oz. serving (uncooked) -- for every 4 oz. you use in place of a cup of the crumbles, it'll add about 40 calories and 5.5 grams of fat to the recipe's total counts. Divide those amounts by the number of servings to get the added calories and fat per serving. If you want to use ground beef, go with extra-lean (at least 96% fat-free). Unlike ground turkey, extra-lean ground beef isn't dry at all and it tastes great! Look for kinds with around 140 calories and 4.5g fat per 4-oz. serving (uncooked) -- that'll add only about 20 calories and 2 grams of fat to the recipe if you swap it for a cup of crumbles. Not bad! Just remember to cook the meat in advance; you might want to add a little salt and pepper as well. P.S. For more recipes that call for those crumbles, click here.
