Mexi' Pizza Makeover! (New Recipe Inside)

When we heard the sad news that Kashi's Mexicali Black Bean Thin Crust Pizza was going away -- possibly FOREVER -- we whipped up our own HG-ified version! Check it out...

 
  HG's Ode to Mexicali Pizza

Entire recipe: 302 calories, 6g fat, 842mg sodium, 47.5g carbs, 10.5g fiber, 7.5g sugars, 22g protein -- PointsPlus® value 8*

A zesty black bean 'n tomato sauce, two types of cheese, roasted corn, peppers, and more. And unlike its inspiration, the serving size is the entire pie. Weeee!

Ingredients:
1 stick light string cheese
1/4 cup frozen sweet yellow corn kernels
1/4 cup seeded and chopped red bell pepper
2 tbsp. chopped tomatillo
2 tbsp. seeded and chopped poblano pepper (see HG FYI)
1 medium-large high-fiber flour tortilla with 110 calories or less (like one of the kinds by La Tortilla Factory)
3 tbsp. canned refried black beans
2 tbsp. no-salt-added tomato sauce
Dash cayenne pepper, or more to taste
Dash garlic powder, or more to taste
2 tbsp. shredded fat-free cheddar cheese

 
 
 

Directions:
Preheat oven to 375 degrees. Spray a baking sheet with nonstick spray.

Break string cheese into thirds and place in a blender or food processor -- blend at high speed until shredded. (Or pull into shreds and roughly chop.)

Bring a skillet sprayed with nonstick spray to medium-high heat. Add corn, bell pepper, tomatillo, and poblano pepper. Cook and stir until slightly blackened and softened, about 6 minutes.

Lay tortilla on the baking sheet and bake until slightly crispy, about 5 minutes. Meanwhile, in a small bowl, thoroughly mix black beans, tomato sauce, and seasonings.

Flip tortilla and spread with bean mixture, leaving a 1/2-inch border. Sprinkle with both cheeses, and top with cooked veggies.

Bake until cheese has melted and tortilla is crisp, about 5 minutes. Slice and eat!

MAKES 1 SERVING

HG FYI: Poblano peppers are sometimes labeled as pasilla peppers. Good to know!

Ken's Lite Accents, Newman's Own Spray Dressings, and several varieties of Wish-Bone Salad Spritzers
- Why are all of the spray dressings going away?! This is VERY distressing, since spray dressings are a really good way to avoid over-dousing your salads. There are still a few flavors of Wish-Bone Salad Spritzers around... and if these ever disappear, we're marching right over to the Wish-Bone headquarters to demand their return. If your favorite dressing doesn't have any chunky ingredients, try pouring some into an empty spray bottle for a DIY solution!

Boca Meatless Chili - It's been gone for a while now, and we haven't forgotten its wondrous ways. But we have found other ways to satisfy our chili cravings, whether they're store bought (click here and here) or homemade (this meatless chili was created by Mr. HG himself)!

Special K Vanilla Snack Bites - "HG, Special K Snack Bites went away SO LONG AGO!" Well, we still miss them... especially the Vanilla ones. Quaker White Chocolatey Drizzle Mini Delights were a decent substitute, but they appear to be MIA as well! For a crispy vanilla fix, check out Quaker Vanilla Crème Brulee Quakes and Baked Classics Vanilla Frosting Multigrain Crisps... Hurry, before those disappear too!

Magic Bullet Platinum Pro - No, it's not a food item, but it HAS been discontinued, much to our dismay. However, there's always the basic Magic Bullet... Still awesome!

 
 
 
  Some Final Words of Hope...


Just because a product disappears, that doesn't mean it's never coming back. MorningStar Farms recently brought back its Corn Dogs (regular AND minis), and we couldn't be happier. And our favorite breakfast wrap from Starbucks vanished long ago, but after we made our own version, it came back too!
