HG Tip! Check the deli counter for the no-salt-added turkey. If you can't find it, go for the reduced-sodium kind instead.
HG FYI: This recipe calls for Sargento cheese due to its impressively low sodium count. Feel free to use any reduced-fat Swiss cheese, just know that the total sodium may vary.
Sometimes, it takes a Hungry Girl to make over a sandwich that's got a man's name. One bite of this, and you'll likely forgo chewing high-calorie Reubens FOREVER...
2 slices rye bread with 70 calories or less per slice (like the kind by Van de Kamp's)
2 tsp. fat-free Thousand Island dressing
2 tbsp. sauerkraut, drained
1 slice Sargento Reduced Fat Swiss Cheese
2 oz. thinly sliced no-salt-added turkey breast (about 3 slices)
1 oz. sliced lean corned beef (1 to 2 slices)
2 tsp. light whipped butter or light buttery spread (like Brummel & Brown)
Lay bread slices flat and spread with dressing. Top one slice with sauerkraut, cheese, turkey, and corned beef. Top with the other bread slice, dressing side down. Spread the top of the sandwich with 1 tsp. butter.
Bring a skillet sprayed with nonstick spray to medium heat. Place sandwich in the skillet, buttered side down. Spread the top with remaining 1 tsp. butter.
Cook until lightly browned, about 2 minutes per side, pressing down with a spatula to seal. Enjoy!
