We LOVE peanutty Thai-style chicken as much as the next person, but combining it with pizza (while DELICIOUS) can result in sky-high nutritionals. Enter this rockin' guilt-free recipe...

Ingredients:
1 stick light string cheese
1 tbsp. plain light soymilk
1/2 tbsp. reduced-fat peanut butter
1/2 tsp. reduced-sodium/lite soy sauce
1/8 tsp. dried minced onion
Dash garlic powder
Dash cayenne pepper
1 high-fiber pita
2 oz. cooked and chopped skinless chicken breast
1/4 cup shredded carrots
1/4 cup bean sprouts
1 tbsp. chopped scallions
1 tsp. chopped cilantro

Directions:
Preheat oven to 375 degrees. Spray a baking sheet with nonstick spray.

Break string cheese into thirds and place in
 a blender or food processor -- blend at high speed until shredded. (Or pull into shreds and roughly chop.)

To make the sauce, combine the following ingredients in a small microwave-safe bowl: soymilk, peanut butter, soy sauce, minced onion, garlic powder, and cayenne pepper. Microwave for 15 seconds. Stir well, and microwave for another 15 seconds, or until slightly thickened.

Lay pita on the baking sheet and spread with sauce, leaving a 1/2-inch border. Sprinkle with shredded string cheese, and top with chicken.

Bake until hot and lightly browned, 10 - 12 minutes.

Top with remaining ingredients, and enjoy!
