Bite it! HG's Dan-Good Chili
HG's Dan-Good Chili

King of the Chil'

Classic recipe alert! This meatless chili, which has just the right amount of kick to it, was previously found only on the pages of Hungry Girl: Recipes and Survival Strategies for Guilt-Free Eating in the Real World. It's become such a favorite that we've decided to share it with the online population. Pssst... In case you're wondering, it's named after HG Lisa's husband, Dan, who created the dish. Enjoy!

Ingredients:
4 1/4 cups canned tomato sauce
1 cup canned diced tomatoes with green chiles
1/2 cup jarred jalapeño slices, drained and chopped
1 1/2 tbsp. chili powder
1 tsp. ground cumin
2 tsp. crushed garlic
1 3/4 cups peeled and chopped carrots
1 1/2 cups chopped onions (1 - 2 onions)
1 1/2 cups chopped portabella mushrooms
1 large red bell pepper, stem removed, seeded, chopped
1 large green bell pepper, stem removed, seeded, chopped
1 cup canned sweet corn kernels, drained
3/4 cup canned black beans, drained and rinsed
3/4 cup canned red kidney beans, drained and rinsed
1 tsp. Worcestershire sauce
Optional: salt

Directions:
In a large pot over low heat on the stove, combine tomato sauce, diced tomatoes with green chiles, jalapeños, chili powder, and cumin. Stir well.

Once mixture is hot, add garlic and carrots. Stir and continue to cook for about 5 minutes.

Meanwhile, bring a large skillet to medium heat on the stove. Add onions, mushrooms, peppers, 1/2 cup water and, if you like, a few dashes of salt. Stirring occasionally, cook until veggies have just slightly softened, about 5 minutes.

Using a slotted spoon to drain any excess water, transfer veggies from the skillet to the large pot. Add corn, beans, and Worcestershire sauce to the pot as well. Mix thoroughly.

Cook over low heat for about 2 hours, stirring every 20 minutes or so, until all veggies are tender.

Serve it up!

Fight it! Steak 'n Shake's Genuine Chili
Steak 'n Shake's Genuine Chili

Run of the Chil'

When it comes to Steak 'n Shake, you probably already know to avoid the Chili Deluxe (with cheese and onions), Chili 3-Way (over spaghetti with extra beef), and Chili 5-Way (over spaghetti with cheese, onions, and extra beef). But, like us, you might have assumed that ordering a simple cup of the stuff (without toppings) would be an okay choice. FALSE. And you see the same thing everywhere you go -- a seemingly innocent, spoonable side order or meal starter with shockingly high fat and calorie counts. Even turkey chili, chicken chili, veggie chili, and chili out of a can are potential calorie bombs. That's why we love our veggie-loaded chili so much. The stats are just right. And you'll never miss the meat; those portabella mushrooms make it extra-hearty. Plus there are SO many beans and vegetables in there -- it's SUPER-CHUNKY. So much good stuff, without a drop of grease in sight. Be careful out there in Chili-ville... or better yet, just whip up your own batch of Dan-Good Chili and keep it on hand for all your chili needs!
