HG's Double-Delicious Reuben Sandwich
Twice As Nice...
Sometimes, it takes a Hungry Girl to make over a sandwich that's got a man's name. One bite of this, and you'll likely forgo chewing high-calorie Reubens FOREVER...
Ingredients:
2 slices rye bread with 70 calories or less per slice (like the kind by Van de Kamp's)
2 tsp. fat-free Thousand Island dressing
2 tbsp. sauerkraut, drained
1 slice Sargento Reduced Fat Swiss Cheese
2 oz. thinly sliced no-salt-added turkey breast (about 3 slices)
1 oz. sliced lean corned beef (1 to 2 slices)
2 tsp. light whipped butter or light buttery spread (like Brummel & Brown)
Directions:
Lay bread slices flat and spread with dressing. Top one slice with sauerkraut, cheese, turkey, and corned beef. Top with the other bread slice, dressing side down. Spread the top of the sandwich with 1 tsp. butter.
Bring a skillet sprayed with nonstick spray to medium heat. Place sandwich in the skillet, buttered side down. Spread the top with remaining 1 tsp. butter.
Cook until lightly browned, about 2 minutes per side, pressing down with a spatula to seal. Enjoy!

Arby's Super Reuben
Reu'd Awakening
We daydream a lot. Only instead of fantasizing about being on an exotic beach with George Clooney, we spend our days longing for delicious food items, like the limited-time-only Super Reuben from Arby's. It's got toasty rye bread that's smeared with Thousand Island dressing, stacked with both turkey AND corned beef, and loaded with cheese and sauerkraut. Until now, we've had to adore this sandwich from afar -- over 700 calories for a deli-style sandwich is just not worth it. But thanks to our recipe redo, we're free to indulge our wild, cheesy, meaty sandwich desires. Fat-free Thousand Island? Check. Reduced-fat Swiss cheese? Check. Lean versions of our favorite sliced meats? Check. Sorry, George -- we've got a hot date with Reuben tonight. (Rain check?)
