HG's Bacon B-fast Taquitos
Taq' a Break(fast)
These li'l items are great whether you make them for yourself or multiply the recipe to feed a crowd... YAY, BREAKFAST! Ingredients: 1 slice center-cut bacon or turkey bacon 1/3 cup fat-free liquid egg substitute (like Egg Beaters Original) 1 slice fat-free American cheese Two 6-inch corn tortillas Directions: Preheat oven to 375 degrees. Spray a baking pan with nonstick spray. Cook bacon until crispy, either in a skillet over medium heat or on a microwave-safe plate in the microwave. (See package for cook time.) In a large microwave-safe mug sprayed with nonstick spray, microwave egg substitute for 45 seconds. Stir and microwave for another 45 seconds, or until set. Mix in cheese, tearing it into pieces as you add it. Chop or crumble bacon, and stir it into the mixture. Place tortillas between 2 damp paper towels. Microwave for 15 seconds, or until warm and pliable. Evenly distribute egg mixture between the two tortillas. Tightly roll each tortilla into a tube, and place seam-side down in the baking pan. If needed, secure with toothpicks. Lightly spray with nonstick spray. Bake until crispy, 10 - 12 minutes. Enjoy! MAKES 1 SERVING

Whataburger's Bacon, Egg & Cheese Breakfast Taquito
Whatabummer.
Um, Whataburger? Can we talk? This is kind of embarrassing, but... it appears that you may not actually know what a taquito is. Taquitos are supposed to be small and crispy, not large and soft! Ordinarily they're fried, but we bake ours to give them crispness without all the oil. But, Whataburger... Whatrudoing?! You're not even trying! Your so-called breakfast taquito is basically a glorified b-fast burrito. And it's totally loaded with fat and calories! We love the concept of fusing Mexican munchies with morning meals, so we're taking the egg-filled-taquito idea and doing it right. Some guilt-free bacon, egg substitute, low-cal cheese, and corn tortillas are all you need to whip up tasty taquitos with a.m. flair.
