Low-Calorie Monte Cristo Sandwich Recipe

What do you get when you combine two tasty meats, Swiss cheese, and toasty bread?! THIS RECIPE! Pssst... You can also find today's creation in the pages of Hungry Girl 300 Under 300, a.k.a. one of our best-selling cookbooks. Get cookin'!

Ingredients:
2 slices light bread
1 tsp. yellow mustard
1 oz. (about 2 slices) thickly sliced reduced-sodium skinless turkey breast
1/2 oz. (about 1 slice) thickly sliced 97% - 98% fat-free ham
1 slice reduced-fat Swiss cheese
1/4 cup fat-free liquid egg substitute (like Egg Beaters Original)
Dash black pepper
1 tsp. light whipped butter or light buttery spread (like Brummel & Brown)
Optional toppings: powdered sugar, sugar-free or low-sugar fruit preserves

Directions:
Lay one slice of bread flat and spread with mustard. Evenly top with half of the turkey, followed by the ham, cheese, remaining turkey, and remaining slice of bread. Slice sandwich in half diagonally.

In a wide bowl, stir egg substitute with pepper.

Bring a skillet sprayed with nonstick spray to medium-high heat. Add butter and let it coat the bottom.

Evenly coat sandwich halves with the egg mixture and place in the skillet. Cook until outsides are toasty and the cheese has melted, about 2 minutes per side, flipping carefully. Yum!

The Calorie Count of Monte Cristo...

We wish we could banish this over-caloried sandwich to an island prison for fatty foods. (We know such a prison does not exist, but we'd certainly know how to fill it FAST!) At its core, the Monte Cristo is just a meat 'n cheese sandwich. But that sandwich is typically dunked in batter and fried in butter! And it's often finished off with sweet toppings like jelly, syrup, and sugar. ACK! But despite its insanely fattening nature, it is incredibly alluring. Luckily, this sandwich was super-easy to make over. Lean meats, reduced-fat cheese, light bread and butter... SIMPLE! So consider the Monte Cristo exiled no more. Hooray!
