Bacon-Egg Waffle Taco Recipe

Taco Guapo!

Taco Bell has been hyping the waffle tacos on its new breakfast menu, but we've been making them for ages. (They were featured on the Hungry Girl TV show, we've got a vegetarian b-fast version, and there are three variations in our dessert book!) Today, we've got a slimmed-down re-creation of one of T. Bell's offerings... It's a must-try!

Prep: 5 minutes
Cook: 15 minutes
Cool: 10 minutes

Ingredients:
1 frozen low-fat waffle, thawed
1/3 cup fat-free liquid egg substitute (like Egg Beaters Original)
2 tbsp. shredded reduced-fat cheddar cheese
1 tbsp. precooked real crumbled bacon (like the kind by Oscar Mayer)
Optional dip: sugar-free pancake syrup

Directions:
Preheat oven to 425 degrees.

Lay thawed waffle flat on a dry surface. With a rolling pin, flatten as much as possible. Evenly drape over the side of a 9" X 5" loaf pan, so it resembles an upside-down taco.

Bake until crispy and firm, about 10 minutes.

Remove from pan, and let cool completely, about 10 minutes.

In a microwave-safe mug sprayed with nonstick spray, microwave egg substitute for 1 minute. Stir in cheese. Microwave for 45 seconds, or until set. Stir in bacon.

Fill taco with egg scramble and enjoy!

Just going by the calorie count of this waffle taco from T. Bell, you might think, "Well, that's not too bad." But we've got the full scoop. First of all, the below stats don't include the syrup it comes with for dipping (hello, sugary calories!). Secondly, it's pretty small. Now, our swap isn't ginormous (it's a comparable size), but if we're gonna eat 320 calories, we want something that won't leave us wanting more. And thirdly, that single taco has a whopping 18 grams of fat. Lame! Our waffle taco has all the cheesy, eggy, bacon-y deliciousness of the Taco Bell version... Some might say MORE. And, of course, the calorie and fat counts are way lower. Pair ours with a piece of fruit, and you've got a balanced morning meal that's both fun and tasty. So stick with our recipe at breakfast.
