It's Taco Tuesday again! These tacos are topped with both Swiss cheese and feta -- unusual, yes, but extremely tasty and completely guilt-free...

Prep: 15 minutes
Cook: 5 minutes

Ingredients:
Sauce
1 tbsp. fat-free plain Greek yogurt
1/2 tsp. ranch dressing/dip seasoning mix
1/8 tsp. cayenne pepper
1 drop lime juice 
Dash chili powder

Tacos
3 oz. cooked and chopped skinless chicken breast
1/4 cup chopped green bell pepper
2 tbsp. chopped onion
Two 6-inch high-fiber flour tortillas with about 50 calories each (like La Tortilla Factory Mini SoftWraps)
1/4 cup shredded lettuce
1 slice Sargento Reduced Fat Swiss Cheese, torn into small pieces
1 tbsp. crumbled reduced-fat feta cheese
2 tbsp. pico de gallo or fresh salsa

Directions:
In a small bowl, stir sauce ingredients until uniform.

Bring a skillet sprayed with nonstick spray to medium-high heat. Add chicken, bell pepper, and onion. Cook and stir until chicken is hot and veggies have slightly softened, about 3 minutes.

On a microwave-safe plate, microwave tortillas for 15 seconds, or until warm.

Spread sauce down the center of the tortillas. Layer each tortilla with lettuce, chicken-veggie mixture, Swiss cheese pieces, feta cheese, and pico de gallo/salsa. Fold and chew!

Baj' Humbug!

You see "Baja Chicken Tacos" on the menu, and you likely think of fresh ingredients and warm beaches. You know what probably doesn't come to mind? Swiss cheese, feta cheese, and creamy dressing. Inexplicable name aside, it does sound unique and delicious. The problem is the plate packs in over 800 calories and nearly 50 fat grams -- ACK! And it comes with soup or a trip to the salad bar, so that's MORE room to get in trouble! To make over these tacos, we started with some lean chicken, mixed up a low-fat spicy ranch sauce, and grabbed our favorite reduced-fat cheeses. When you bite into this new recipe swap, the only thing that'll come to mind is the amazing flavor. We'll raise a taco to that!
