Healthy Chicken Bruschetta Sandwich Recipe

Bite it! Hungry Girl's Chicken Bruschetta Sandwich
HG's Chicken Bruschetta Sandwich

Brusch' Up Your Chicken!

Juicy chicken, zesty pesto, fresh tomatoes, melty cheese, and crispy lettuce? Don't mind if we do!

Prep:

Cook: 10 minutes

Ingredients:
2 tbsp. chopped plum tomato
1 1/2 tsp. finely chopped red onion
1/4 tsp. balsamic vinegar
1/8 tsp. chopped garlic
1 tsp. dry pesto sauce mix (like the kind by Knorr)
1 tsp. light mayonnaise
 1/4 tsp. olive oil
One 4-oz. raw boneless skinless chicken breast cutlet, pounded to 1/2-inch thickness
Dash each salt and black pepper
1 slice Sargento Reduced-Fat Provolone cheese
One 100-calorie flat sandwich bun (like Arnold/Brownberry/Oroweat Sandwich Thins), lightly toasted (optional)
1/4 cup shredded lettuce

Directions:
To make the tomato topping, in a small bowl, combine tomato, onion, vinegar, and garlic. Mix well.

To make the pesto mayo, in a small microwave-safe bowl, combine sauce mix with 1 tbsp. water. Stir well. Microwave for 15 seconds. Stir and microwave for 10 seconds. Add mayo and oil, and stir until uniform.

Bring a grill pan (or skillet) sprayed with nonstick spray to medium-high heat. Season chicken with salt and pepper, and cook for about 3 minutes per side, until chicken is cooked through. Top chicken with cheese and cover and cook until melted, about 1 minute.

Spread pesto mayo on the bottom half of the bun. Top with lettuce, cheesy chicken, and tomato topping, followed by the top bun. Eat up!

Not So Rockin', Robin…

When you compare the below numbers to some of the other Red Robin burgers -- ahem, Prime Chophouse Burger, with your 1,456 calories -- the Bruschetta Chicken Burger might not look like a terrible selection. But the fact remains that it's not exactly a great option, especially considering it's just a glorified grilled chicken sandwich. (And, no, those numbers don't include a side of French fries.) However, one more fact remains: A bruschetta-inspired chicken sandwich sounds delicious! We knew we could create a guilt-free version, so we got to work in the HG test kitchen, and maximum tastiness ensued! So if you find yourself at Red Robin with a chicken craving, we suggest the Simply Grilled Chicken Salad (minus the garlic bread and cheesy croutons). But if you want to wrap your face around a chicken sandwich with all the fixins, our recipe is where it's at!
