Lean 'n Green!

Classic recipe alert! We came up with this yum-azing swap ages ago, but we've spiffed it up in recent years. And because creamy casseroles are never going out of style, we present to you our slimmed-down side dish!

Ingredients:
Two 16-oz. bags frozen French-style green beans, thawed, drained, and dried
Two 10.75-oz. cans 98% fat-free cream of celery condensed soup
One 8-oz. can sliced water chestnuts, drained
1 oz. (about 15 pieces) onion-flavored soy crisps or popped chips (like the kind by Popchips), crushed

Directions:
Preheat oven to 325 degrees. Spray a rectangular casserole dish (2 - 3 qt.) with nonstick spray.

Evenly layer ingredients in the casserole dish: half of the green beans, 1 can soup, and half of the water chestnuts. Repeat layering with remaining green beans, 1 can soup, and water chestnuts.

Bake for 45 minutes.

Top with crushed soy crisps. Bake until crisps are lightly browned, about 10 minutes. Enjoy!

Green with Envy…

This traditional holiday dish has every right to be jealous of our guilt-free swap. Why? For one, ours is equally creamy and delicious. Two, it eschews those fried onions that come in a can. (You know, the ones where you use half the can to top your beans, and then end up snacking on the rest through New Year's Day?) Third, ours has water chestnuts, and water chestnuts are awesome. Finally, well, just look at the numbers! A serving of ours has less than half the calories and around 80 percent less fat! And when you think about all the other foods on the holiday table, it's smart to cut calories anywhere you can. Our DELICIOUS recipe is here to help!
