We're not sure if you've been informed, but certain veggies are MAGICAL. It's true! Today, we're talking about some of our favorite transformative veggies and all the wonderful things they can do...

  The Magical Transformations of... Zucchini!

Fettuccine - Have a veggie peeler? You're all set! Just drag it lengthwise down your zucchini. Rotate the squash and repeat. No cooking necessary! Put your fettu-cchini (tee-hee) to use in this salad, or just toss it with regular pasta to boost the portion size while barely affecting the calorie count.

Potato Skins - How cool is this? Microwave a couple of zucchini to soften 'em, and then halve them lengthwise and crosswise. Scoop out the insides, and top the skins however you like. Click here for the full recipe!

Lasagna Noodles - It doesn't get much easier than this. Just cut the zucchini into slabs, cook until softened, and layer into lasagna like you would with pasta sheets. In this Veggie-rific Noodle-Free Lasagna, eggplant also plays the part of noodles!

  The Magical Transformations of... Portabella Mushrooms!

Pizza - Sure it's unconventional, but it's completely delicious! Bake up a 'bella cap, and blot away extra moisture. Then top with tomato sauce, light cheese, and whatever else you like on pizza. Burger Patties - This transformation is really more of a costume change. Just cook the mushroom cap, and dress it up like a burger. Meaty, juicy, hamburger-y greatness! Click here for a Big Mac swap piled high with TWO portabellas.

Fajita Steak - This is a spectacular (and sneaky!) meatless option. Slice the mushroom into strips, and sprinkle with fajita-friendly spices like cumin and chili powder. Sauté with some onions and peppers, and assemble your beefy fajitas. Click for a recipe complete with DIY chunky guacamole!

  The Magical Transformations of... Butternut Squash!

  The Magical Transformations of... Cauliflower!

Mashed Potatoes - Mashed potatoes are classic. But have you tried mashed cauliflower? So good! Try it solo (with a double dose of cheese), or mix it with regular mashed potatoes like we did with our Great Garlic Miracle Mashies!

Potato Salad - We don't know how the cauliflower does it, but it manages to pull off a seamless spud swap in creamy potato salad. Our I Can't Believe It's Not Potato Salad! is perfect for those upcoming Labor Day cookouts!

Risotto - Traditional risotto is mostly made of rice. Factor in the butter or oil used to coat the grains in a "film of fat" (eww!), and the calories add up fast. To remove lots of starch from the situation, we combine finely chopped cauliflower with brown rice (a fiber-ific duo). Then we add creamy no-guilt ingredients like The Laughing Cow Light cheese wedges. Try it with mushrooms, shrimp, and even pumpkin!
