Spiked No-Nonsense Nog

1/6th of recipe (about 1 cup): 155 calories, 1.5g fat, 315mg sodium, 21g carbs, 0.5g fiber, 16.5g sugars, 4.5g protein -- PointsPlus® value 5*

4 1/2 cups light vanilla soymilk
4 oz. rum
One 4-serving box vanilla instant pudding mix
5 no-calorie sweetener packets (like Truvia or Nectresse)
1/2 tsp. ground nutmeg
6 dashes cinnamon
Optional topping: Reddi-wip

Combine all ingredients except cinnamon in a large blender, and blend at high speed until smooth.

Transfer to a pitcher, cover, and refrigerate until thickened, at least 3 hours.

Stir well before serving. Sprinkle each serving with a dash of cinnamon, and enjoy!

Here's a lightened-up version of Oprah's Moscow Mule!

5 - 8 ice cubes
1 oz. vodka
1 no-calorie sweetener packet (like Truvia or Nectresse)
1/2 lime plus 1 slice lime
4 oz. zero-calorie ginger ale
1 sprig fresh mint

Place ice in a glass. Add vodka, sweetener, and the juice from half of a lime. Top with ginger ale, and stir. Garnish with mint and a lime slice!


ChocoMint Martinis

1/2 of recipe (1 martini): 150 calories, 1g fat, 80mg sodium, 9.5g carbs, 0.5g fiber, 7.5g sugars, 1g protein -- PointsPlus® value 5*

1 packet hot cocoa mix with 20 - 25 calories (like Swiss Miss Diet or Nestlé Fat Free)
1 no-calorie sweetener packet (like Truvia or Nectresse)
2 drops peppermint extract
2 tbsp. Cool Whip (thawed)
1 tbsp. chocolate syrup
1 cup crushed ice or 5 - 8 ice cubes
3 oz. vodka
Optional garnish: chocolate graham crackers

In a glass, combine cocoa mix with sweetener. Add peppermint extract and 2 oz. hot water, and stir to dissolve. Add Cool Whip and syrup, and stir until uniform.

Place ice in a shaker. Add vodka, 2 oz. cold water, and cocoa mixture. Shake vigorously, and strain into 2 martini glasses. Enjoy!

One 2-serving packet sugar-free raspberry lemonade powdered drink mix
3 oz. rum
4 oz. club soda
10 - 16 ice cubes

Apple & Cream Cheese Stuffed French Toast Nuggets

1/4 cup fat-free liquid egg substitute (like Egg Beaters Original)
1 tsp. vanilla extract
1/2 tsp. cinnamon
1/4 cup diced apple
1 no-calorie sweetener packet (like Truvia or Nectresse)
2 tbsp. reduced-fat cream cheese, room temperature
1 light hot dog bun
2 tsp. light whipped butter or light buttery spread (like Brummel & Brown)

In a wide bowl, mix egg substitute, vanilla extract, and 1/4 tsp. cinnamon.

In a small microwave-safe bowl, top apple with sweetener and remaining 1/4 tsp. cinnamon; toss to coat. Microwave for 1 minute, or until softened. Mix in cream cheese.

Open bun without separating the halves. Spoon apple mixture onto one half and lightly press to seal. Slice into four "nuggets."

Bring a skillet sprayed with nonstick spray to medium-high heat. Add butter and let it coat the bottom of the skillet.

Meanwhile, coat nuggets on all sides with egg mixture.

Cook nuggets, flipping occasionally, until golden brown on all sides, 3 - 4 minutes. Enjoy!

Big Blue Buffalo Jala’ Poppers

1/2 cup Fiber One Original bran cereal
1/4 tsp. onion powder
1/4 tsp. garlic powder
Dash cayenne pepper
4 wedges The Laughing Cow Light Creamy Swiss cheese
2 tbsp. Frank’s RedHot Original Cayenne Pepper Sauce
3 tbsp. crumbled blue cheese
6 jalapeño peppers, halved lengthwise, seeds and stems removed (see HG Tip)
1/4 cup fat-free liquid egg substitute (like Egg Beaters Original)

Preheat oven to 350 degrees. Spray a baking sheet with nonstick spray.

In a blender or food processor, grind cereal into crumbs.

Transfer to a wide bowl and mix in seasonings.

In a small bowl, thoroughly mix cheese wedges with 1 tbsp. hot sauce. Stir in blue cheese. Evenly spoon and spread mixture into the pepper halves.

In another wide bowl, mix egg substitute with remaining 1 tbsp. hot sauce. One at a time, coat pepper halves with egg mixture, shake to remove excess, and coat with crumbs. Evenly place on the baking sheet, stuffed sides up.

Bake until outside is crispy and pepper halves have softened, 25 - 30 minutes. Mmmm!


HG Tip! Be very careful while handling jalapeño peppers. Avoid touching your eyes, and wash your hands frequently.

Cheeseburger Quesadilla

1 frozen meatless hamburger-style patty with 100 calories or less and about 250mg sodium (like Boca Original Vegan Meatless)
2 tbsp. chopped onion
1 medium-large high-fiber flour tortilla with 110 calories or less (like the kinds by La Tortilla Factory)
1 slice 2% milk American cheese, chopped
1 tbsp. chopped pickles
Optional topping: ketchup

On a microwave-safe plate, microwave burger patty for 1 minute, or until thawed. Chop into bite-sized pieces.

Bring a skillet sprayed with nonstick spray to medium-high heat. Cook and stir onion until softened, 3 - 5 minutes.

Lay tortilla flat and evenly top with chopped cheese. Top one half with onion, burger pieces, and pickles.

If needed, clean skillet. Re-spray skillet and return to medium-high heat. Place the half-loaded tortilla flat in the skillet and cook for 2 minutes.

Fold the cheese-only half over the filling and press lightly to seal. Carefully flip and cook until crispy, about 3 minutes.

Slice into wedges and enjoy!
