Crunchy Sassy Chinese Slaw

PER SERVING (about 1 cup): 111 calories, 3.5g fat, 375mg sodium, 17.5g carbs, 4g fiber, 10g sugars, 3g protein -- PointsPlus® value 3*

This slaw is so good, it's hard not to eat ALL of it (so do everyone a favor and make a double batch!)...

Ingredients:
One 16-oz. package Mann's Broccoli Cole Slaw
1 cup canned water chestnuts, drained and sliced into thin strips
1 cup canned mandarin orange segments packed in water or juice, drained and chopped (and rinsed, if packed in juice)
1 cup chopped scallions
2/3 cup Newman's Own Lite Low Fat Sesame Ginger Dressing
1/4 cup slivered almonds

Directions:
In a large bowl, toss all ingredients together, and mix well. Refrigerate for at least 2 hours. Stir well before serving. Enjoy!

Crazy Calypso Salad

PER SERVING (about 2 cups): 174 calories, 5g fat, 429mg sodium, 21.5g carbs, 4g fiber, 13.5g sugars, 12g protein -- PointsPlus® value 4*

Shrimp, mango, avocado... AHHHHHHHHH, IT'S SOOOOOO GOOOOOOOOD!

Ingredients:

For Salad:
8 cups fresh spinach leaves
8 oz. cooked shrimp
2 cups chopped mango (about 2 mangos)
1 cup cubed avocado (about 1 small avocado)

For Dressing:
1/3 cup seasoned rice vinegar
2 tbsp. lime juice
1 no-calorie sweetener packet (we like Splenda!)
1/8 tsp. ground cayenne pepper

Directions:
To make the dressing, combine vinegar, lime juice, sweetener, and pepper in a small bowl. Mix well, and set aside.

In separate large serving bowl, combine all salad ingredients. Pour dressing over salad, and toss until all ingredients are coated. Enjoy!
