Jell-O rocks... even after all these years. Check out the three new recipes we whipped up, just 'cuz we like this wiggly jiggly stuff!   
Fizzy Fruit Mini Molds

PER SERVING (1 Mini Mold): 36 calories, 0g fat, 109mg sodium, 5.5g carbs, 1g fiber, 4.5g sugars, 1.5g protein -- PointsPlus® value 1*

You could have all three of these for just eight calories more than a 100-calorie pack. Unfortunately, these wobbly desserts aren't nearly as portable... so don't even think about stuffing one in your purse, you nut!


Ingredients:
One 4-serving package (or half an 8-serving package) Jell-O Sugar Free Raspberry Gelatin dessert mix
1 1/4 cups diet orange soda, cold
1/2 cup chopped apples (preferably Fuji!)
1/2 cup chopped peaches or nectarines
Optional topping: Fat Free Reddi-wip

Directions:
Place gelatin mix in a bowl, and cover with 3/4 cup boiling water. Stir constantly for at least 2 minutes (until completely dissolved). Stir in the soda. Refrigerate for about an hour and fifteen minutes (until thickened but not set).

Stir fruit into the Jell-O. Evenly distribute mixture among 3 dessert bowls or small glasses. Return to fridge until set (about 3 hours longer). If you like, top each with a squirt of Reddi-wip before digging in!

HG's Crown Jewel Pie

We took a beauteous classic gelatin dessert and gave it a guilt-free makeover AND a fiber-rific crust! HG Tip: Do the first step the night before!

Ingredients:

For Crust:
1 1/2 cups Fiber One bran cereal (original), ground to a breadcrumb-like consistency in a blender or food processor
1/4 cup light whipped butter or light buttery spread
4 no-calorie sweetener packets (We like Splenda!)
1 tsp. cinnamon

For Filling:
One 4-serving package Jell-O Sugar Free Orange Gelatin dessert mix
One 4-serving package Jell-O Sugar Free Lime Gelatin dessert mix
One 4-serving package Jell-O Sugar Free Strawberry Banana Gelatin dessert mix
One 4-serving package Jell-O Sugar Free Strawberry Gelatin dessert mix
Half an 8-ounce container Cool Whip Free, thawed

Directions:
In a medium bowl, combine Orange mix with 1 cup boiling water, and stir for at least 2 minutes (until completely dissolved). Then add 1/2 cup cold water, and transfer mixture to a square or rectangular medium container. Place container in the fridge. Repeat this process once with the Lime mix and once with the Strawberry Banana mix (transferring each to its own container). Refrigerate until firm (about 4 hours or overnight).

Once gelatins are firm, slide a knife along the sides of each to release them from the containers. Cut each into half-inch cubes, and place cubes in the fridge.

Preheat oven to 350 degrees.

In a large bowl, combine Strawberry mix with 1 cup boiling water, and stir for at least 2 minutes (until completely dissolved). Then add 1/2 cup cold water, and place bowl in the fridge. Refrigerate for about 45 minutes (until slightly thickened but still mixable).

Meanwhile, melt butter and mix it with 1 oz. water. Combine this mixture with all other crust ingredients, and stir until mixed well. Spray the bottom of a springform cake pan (about 9" wide) lightly with nonstick spray. Then evenly distribute crumb mixture -- using your hands or a flat utensil to firmly press and form the crust -- along the bottom of the pan. Bake crust in the oven for 10 minutes, and then remove it and allow to cool.

Once the Strawberry gelatin has thickened slightly, vigorously stir in the Cool Whip until completely blended (use a whisk if you've got one). Very gently stir cubes into the Cool Whip/Jell-O mixture. Give the sides of the cake pan containing the crust a light mist with nonstick spray. Then pour the contents of the bowl into the pan. Refrigerate until firm (at least 3 hours).

Once ready to serve, slide a knife along the outside of the pie, and then carefully release and remove springform top. Cut pie into 8 slices, and ENJOY!

Upside-Down Personal Key Lime Pies

PER SERVING (1 pie): 82 calories, 1g fat, 103mg sodium, 15g carbs, <0.5g fiber, 5g sugars, 1g protein -- PointsPlus® value 2*

They're fluffy and they're fantastic! Lime Jell-O never had it so good...




Ingredients:

One 4-serving package (or half an 8-serving package) Jell-O Sugar Free Lime Gelatin
dessert mix
2 cups Cool Whip Free, thawed
1 1/2 tbsp. lemon juice
1/4 tsp. vanilla extract
1 no-calorie sweetener packet
8 low-fat honey graham crackers (2 sheets)

Directions:
In a medium bowl, combine 1 cup boiling water with gelatin mix and sweetener. Stir for at least 2 minutes (until completely dissolved). Then add 1/2 cup cold water, the lemon juice, and the vanilla extract. Refrigerate for about 45 minutes, until slightly thickened but still mixable.

Next, stir in the Cool Whip. Mix until thoroughly blended (a wire whisk works best). Divide mixture among 5 dessert dishes. Refrigerate until firm (at least 3 hours).

Once ready to serve, crush graham crackers, and evenly distribute the crumbs over the top of the dishes.
