Snazzed-Up Crispy Crispy Chicken Salad
Snazzed-Up Crispy Crispy Chicken Salad

Chick Chick Hooray!
Macaroni Grill makes a TEMPTING salad... fried chicken, bacon, feta, lotsa Parmesan and more. But ours has all that, too, and it is just as good. REALLY!
Check it out.

For Salad
4 cups mixed greens
2 Roma tomatoes, 1 diced and 1 chopped into wedges
1/4 cup crumbled fat-free feta cheese
2 slices extra-lean turkey bacon
1 tsp. reduced-fat Parmesan-style topping

For Crispy Chicken
3 oz. raw boneless skinless lean chicken breast
1/4 cup Fiber One Original bran cereal
1 tbsp. fat-free liquid egg substitute (like Egg Beaters Original)
2 tsp. reduced-fat Parmesan-style grated topping
1/4 tsp. Italian seasoning
1/4 tsp. garlic powder
Optional: salt, to taste

For Dressing
2 tbsp. fat-free ranch dressing
1/4 - 1/2 tsp. freshly ground black pepper (regular pepper's fine if you don't have a peppermill)
1 tsp. reduced-fat Parmesan-style topping
dash garlic powder

Cook bacon according to package instructions, either in a pan with nonstick spray or in the microwave. Once cool enough to handle, chop into small pieces and set aside. In a small dish, combine all ingredients for dressing, adjusting pepper to taste. Mix well and set aside. In a blender or food processor, grind Fiber One to a breadcrumb-like consistency. Place half of the crumbs in a small dish, and reserve the other half for the next time you make this awesome salad. (Why? Most blenders won't grind less than 1/4 cup of the stuff at a time.) To the dish with the crumbs, add 2 tsp. Parm-style topping, the Italian seasoning, and 1/4 tsp. garlic powder. Mix well, making sure to break up any clumps of Parm. If you like, season to taste with salt. Pour crumb mixture onto a plate and set aside. Lay chicken breast flat between 2 pieces of plastic wrap. Using a meat hammer, a heavy can, or whatever you have available, pound until evenly flat and about 1⁄2 inch thick. Place on a small plate. Pour egg substitute over chicken. Flip chicken and make sure both sides are evenly coated with egg substitute. Lay chicken breast in the plate of breadcrumbs and flip to coat the piece evenly (make sure there are no bald patches!). Bring a pan sprayed with nonstick spray to medium-high heat. Cook chicken for 4 - 5 minutes per side, until cooked through. Let cool slightly, and then slice chicken into 1/2-inch-wide strips. In a large bowl, toss your greens and diced tomatoes. Top with feta, bacon pieces, chicken strips, and tomato wedges. Sprinkle with 1 tsp. Parm-style topping, serve with dressing, and dig in!

Macaroni Grill's Parmesan-Crusted Chicken Salad
Macaroni Grill's Parmesan-Crusted Chicken Salad

Bad Luck Parm
Macaroni Grill, your crazy fried chicken salad is an embarrassment to salads everywhere. Over a thousand calories? 63 grams of fat? What on Earth are you thinking?! And on top of those crazy stats, that salad is 100% unimpressive! We tried it and, despite all that fat, there was barely a HINT of Parmesan flavor in the thing, and the chicken was so flat it was barely identifiable. Sadly, Mac Grill isn't the only place in the world of crazy fried chicken salads with horrific stats. Even the fast-food version from McDonald's, aka Premium Bacon Ranch Salad with Crispy Chicken (and, yes, ranch dressing), has 20g fat and a PointsPlus® value of 10*. Red Robin's Crispy Chicken Tender salad clocks in with (sit down for this one!) a mind-boggling 1,450 calories and 97g fat (PointsPlus® value 39*)! Bottom line? Avoid greens topped with fried chicken while dining out or hitting the drive-thru. Satisfy your craving by creating our Snazzed-Up Crispy Crispy Chicken Salad with your very own hands. Even with our creamy dressing, it has just 345 calories. Hot stuff!
