After getting a BAZILLION requests for pumpkin bread, we figured it was time to make some. And after EIGHT attempts, we got it just right. Try it and see!
1 1/4 cups whole-wheat flour
1/4 cup all-purpose flour
1/2 cup Splenda No Calorie Sweetener (granulated), or HG Alternative
1/4 cup brown sugar (not packed)
2 1/4 tsp. baking powder
1 1/2 tsp. cinnamon
1/2 tsp. salt
1/3 tsp. pumpkin pie spice
One 15-oz. can pure pumpkin
1/2 cup fat-free liquid egg substitute (like Egg Beaters Original)
1 tsp. vanilla extract
1/4 cup sweetened dried cranberries or raisins, chopped
Preheat oven to 350 degrees. Spray a loaf pan with nonstick spray.
In a large bowl, mix both types of flour, Splenda, brown sugar, baking powder, cinnamon, salt, and pumpkin pie spice.
In another large bowl, whisk pumpkin, egg substitute, and vanilla extract. Add this mixture to the large bowl and stir until just blended.
Stir in chopped cranberries or raisins. Transfer batter to the loaf pan and smooth out the surface. Bake until a toothpick inserted into the center comes out clean, about 50 minutes.
HG Alternative! Swap out the Splenda for the same amount of granulated white sugar, and each serving will have 185 calories, 42.5g carbs, and 21.5g sugars (PointsPlus® value 5*).

Your standard pumpkin bread recipe is loaded with eggs, sugar, butter, too many raisins, and sometimes even nuts... which means it's likely going to be sky high in fat and calories. A slice of the stuff at Starbucks clocks in with around 330 calories, 12g fat, and a measly 1g fiber. Imagine pairing a piece of it with one of SB's fancy-schmancy seasonal hot cocoas -- you don't wanna know how fattening THOSE are. (Pssst... HG swaps for them comin' up soon!) And watch out if you live near a Caribou Coffee... the pumpkin bread there weighs in with 430 calories and 22g fat per slice. Eeeks! Instead of all that nonsense, bake up a lovely loaf of our Perfect Pumpkin Bread over the weekend, and you'll have delicious grab-n-go breakfasts for the whole week. Then you can stop off for a Skinny Latte at The 'Bucks without even being tempted by the pastry case. Lucky for you, we're solution-minded people.
