I love Mexican food. Can you recommend some yummy diet-friendly choices that are on the healthy side?

Hooray for Mexican food! I love it, too! So much so that I've spent countless hours trying to find ways to enjoy it...guilt-free! I've learned a few tricks. If you're eating Mexican food out, avoid the chips at all costs (calories and fat rack up WAY too quickly). Also avoid regular sour cream (tofu or fat free sour cream is a much better choice) -- and if you can live without it, leave off the cheese (too much fat). If you order a salad, never EVER eat that greasy taco shell tortilla bowl thing it may be served in. It's horrible for you! Some of my favorite restaurant finds? Applebee's Sizzling Chicken Skillet, Baja Fresh Shrimp Ensalada and Taco Bell's soft chicken tacos (without cheese). Eating at home? Amy's makes awesome organic burritos that are under 300 calories. And Trader Joe's Chicken Fajitas are fantastic as well. Mexican food = happiness! Ole!

Recent studies show that soy can help prevent cancer, heart disease and osteoporosis. Luckily there are tons of delicious foods that are packed with the stuff. Crum Creek makes a whole slew of delicious soy-packed products, including pasta (sooo good), soy nuts, muffins, pancakes and more. They're a little difficult to find in stores but are all available online. Boca items (found in most supermarkets) are also great sources of soy. Their new lasagna packs in 20g of soy protein per serving! Need MORE? 8th Continent Light Vanilla Soy Milk and Glenny's Soy chips are both great low calorie ways to enjoy the benefits of soy.
