Who doesn't love a good PB&J sandwich now and then (other than people with nut allergies... and the gluten intolerant... and jelly haters)? We're celebrating the dynamic duo of peanut butter and jelly today with hot couples, cool product finds, and a brand-new delicious recipe! Do we know how to party or what?   
PB&J Yogurt Parfait

PER SERVING (entire parfait): 205 calories, 3g fat, 199mg sodium, 37g carbs, 2g fiber, 24g sugars, 7g protein -- PointsPlus® value 5*

Yum!!! Here's a whole new way to eat your PB&J...






Ingredients:
6 oz. fat-free strawberry yogurt (like the kind by Yoplait Light)
1/2 cup chopped strawberries
1/2 package Nabisco 100 Cal Pack Planters Peanut Butter Cookie Crisps, crushed
1 tsp. peanut butter chips (found in the baking aisle), crushed

Directions:
Spoon half of the yogurt into a parfait glass (or any glass).

Top with half of the strawberries, followed by half of the crushed cookies (1/4th of the package). Sprinkle half of the crushed chips over the layer of crushed cookies.

Continue layering with remaining yogurt, strawberries, crushed cookies (1/4th of the package), and crushed chips.

Dig in!

Stuff you should have on hand for sandwich assembly...

Reduced-Fat Peanut Butter - There are many brands that make fat-slashed versions of everyone's favorite nut butter. On average, a 2-tbsp. serving has 190 calories, 12g fat, and 2g fiber (PointsPlus® value 5*). Skippy Reduced Fat Creamy and Reduced Fat Super Chunk are our picks. For LOW-FAT peanut butter, seek out Better'n Peanut Butter. A 2-tbsp. serving of that slightly sweet stuff has 100 calories, 2g fat, and 2g fiber (PointsPlus® value 2*).

Sugar-Free or Low-Sugar Preserves/Jam - The SF ones have lower stats, but the LS types are still totally reasonable. We like Smucker's Sugar Free Preserves & Jams and Polaner Sugar Free Preserves with Fiber. Those each have just 10 calories per tbsp. (PointsPlus® value 0 - 1*), and Polaner's line packs 3g fiber into each tbsp. But if you're willing to spend 25 calories per tbsp. (PointsPlus® value 1*), the Low Sugar options from Smucker's taste RIDICULOUSLY good! All of these come in many, many flavors, so you can continue your sibling rivalries over which jelly goes best with peanut butter -- grape or strawberry. (STRAWBERRY!)

Light Bread and Flat Buns - Any type of bread with about 45 calories and a few grams of fiber per slice qualifies, but our favorite line-up is undoubtedly Sara Lee 45 Calories & Delightful. In the bun department, it's all about the 100-cal choices, like Arnold Select/Oroweat Sandwich Thins. And in a pinch, light English muffins will do.
