HG's Just Peachy Cobbler

Cobble, Cobble!
Find yourself craving this sweet Southern classic from time to time? Don't dive into some crazy, over-caloried version -- make our Just Peachy Cobbler, instead! You won't regret it...

Ingredients:

For Peach Filling
1/4 cup Splenda No Calorie Sweetener (granulated)
2 tbsp. brown sugar (not packed)
1 tbsp. cornstarch
3/4 tsp. cinnamon
1/8 tsp. salt
4 cups sliced and peeled unsweetened peaches, fresh or thawed from frozen

For Cobbler Base
2/3 cup Fiber One bran cereal (original)
1/2 cup whole-wheat flour
2 tbsp. brown sugar (not packed)
2 tsp. baking powder
1/2 tsp. cinnamon
1/3 cup light vanilla soymilk
1/4 cup sugar-free pancake syrup
1 tbsp. light whipped butter or light buttery spread (like Brummel & Brown)

Optional toppings: Fat Free Reddi-wip and additional cinnamon

Directions:
Preheat oven to 400 degrees.

In a large bowl, combine all ingredients for the filling except peaches. Add 1/4 cup water, and stir until ingredients have dissolved. Add peaches and mix well. Set aside.

To make the cobbler base, grind cereal to a breadcrumb-like consistency in a blender or food processor. Transfer crumbs to a bowl and add all other dry ingredients for cobbler base. Mix well. Add soymilk, syrup, and butter, and mix until smooth.

Prepare an 8-inch by 8-inch baking dish (glass is best) by spraying it well with nonstick spray. (Use butter-flavored spray if you've got it.) Spoon cobbler base into the bottom of the baking dish, and top evenly with peach filling.

Bake in the oven for about 30 minutes, until filling begins to thicken and bubble. Let cool slightly and, if you like, top each serving with a squirt of Reddi-wip and a sprinkling of cinnamon. Enjoy!

Papa, Don't Peach!
Like many fruit-based desserts, peach cobbler can be pretty deceptive. It's made with real fruit, so it's gotta be a good choice, right?!?! Ummmm... unfortunately, many cobbler recipes call for an ENTIRE stick of butter; some even call for shortening or lard. One recipe we found uses ALL three. SHEESH! In addition to the crazy amount of fat that goes into cobbler, there's the sugar -- sometimes multiple cups of the stuff -- and the flour. Poor peaches! Why mess up a fruit-filled dessert like that?! OK, enough pastry bashing. While there's a time and place for regular cobbler (once in a blue moon and where you can share it with a gaggle of friends), it's nice to be able to have a lightened-up option that'll totally satisfy a craving. That's where HG comes in. Whip up our swap. It's fruity and sweet, and it has a fluffy, fiber-ific bottom. You won't be missing out on taste -- just those annoying excess fat grams and calories. PEACHY!
