Ingredients:For Peach Filling
1/4 cup
Splenda No Calorie Sweetener (granulated)2 tbsp. brown sugar (not packed)
1 tbsp. cornstarch
3/4 tsp. cinnamon
1/8 tsp. salt
4 cups sliced and peeled unsweetened peaches, fresh or thawed from frozen
For Cobbler Base2/3 cup
Fiber One bran cereal (original)1/2 cup whole-wheat flour
2 tbsp. brown sugar (not packed)
2 tsp. baking powder
1/2 tsp. cinnamon
1/3 cup light vanilla soymilk
1/4 cup sugar-free pancake syrup
1 tbsp. light whipped butter or light buttery spread (like
Brummel & Brown)
Optional toppings: Fat Free Reddi-wip and additional cinnamon
Directions:
Preheat oven to 400 degrees.
In a large bowl, combine all ingredients for the filling
except peaches. Add 1/4 cup water, and stir until ingredients have dissolved. Add peaches and mix well. Set aside.
To make the cobbler base, grind cereal to a breadcrumb-like consistency in a blender or food processor. Transfer crumbs to a bowl and add all other dry ingredients for cobbler base. Mix well. Add soymilk, syrup, and butter, and mix until smooth.
Prepare an 8-inch by 8-inch baking dish (glass is best) by spraying it well with nonstick spray. (Use butter-flavored spray if you've got it.) Spoon cobbler base into the bottom of the baking dish, and top evenly with peach filling.
Bake in the oven for about 30 minutes, until filling begins to thicken and bubble. Let cool slightly and, if you like, top each serving with a squirt of Reddi-wip and a sprinkling of cinnamon. Enjoy!
