Eclectic Slide!
We love sliders... They're cute, they're fun, and you get to eat more than one. Check out our latest recipe -- a swap for the famous AM sandwiches at Ruby's. We call 'em our Hot Stack Morning Sliders!

Ingredients:
1 Arnold Select/Brownberry/Oroweat Sandwich Thins roll (preferably Honey Wheat)
1 slice fat-free American cheese
1/2 cup fat-free liquid egg substitute (like Egg Beaters Original)
3 slices (about 2 oz.) Canadian bacon

Directions:
Slice roll into three wedges. (Picture a clock. Cut at 12, 4, and 8.) Separate the top and bottom pieces and set aside. Cut cheese into thirds in the same way and set aside.

Bring a medium skillet sprayed with nonstick spray to medium heat. Add egg substitute and tilt skillet so the egg substitute coats the bottom, creating an egg pancake. Without stirring, cook until solid enough to flip, about 2 minutes. Carefully flip and cook until firm, about 1 minute. Remove and, once cool enough to handle, slice into three large wedges. Set aside.

Remove skillet from heat, re-spray with nonstick spray, and return to medium heat. Lay Canadian bacon slices flat in the skillet, and cook until lightly browned on the bottom, about 1 minute.

Flip slices and, while still in the skillet, carefully place an egg wedge over each, folding it to fit (doesn't have to be perfect!). Top each egg layer with a piece of cheese. Cover pan and continue to cook for about a minute, until cheese has melted. Using a spatula, slide each stack onto a bottom piece of the roll. Finish each off with a top piece, and eat ASAP!

Wider Sliders...
When we look at adorable little sandwiches, something seems to tell us, "Eating these can't possibly be as bad as having a BIG sandwich!" Sorry, folks. As fun as this (totally appealing) breakfast entrée from Ruby's sounds, it's not the kind of thing you want to start your day with. Sadly, this trio of bite-sized b-fast treats contains close to 800 calories and more than 40 fat grams... NOT including the home-style hash browns with veggies they share a plate with! Heads up: The Ruby's site lists a side of those spuds as having 150 calories and 4.5g fat. But the tater serving we were given was so large, we're sure it had twice as many calories and fat grams. Watch those portion sizes, people! But back to the sliders... Go with egg substitute instead of whole eggs, fat-free cheese rather than the fatty stuff, light bread in place of those calorific mini buns, and naturally lean Canadian bacon to build your 'wiches. NOW you're ready to face the day. (P.S. Want a quick, trimmed-down version of those potatoes? Grab some frozen potatoes O'Brien, and cook 'em in a skillet sprayed with nonstick spray over medium-high heat until crispy.)
