Hey Mambo! Veggie Italiano Quesadilla

Veggie lovers, rejoice! This is one of the BEST quesadillas ever to come out of the HG kitchen. It features a special appearance by Mini Babybel Light...


Ingredients:

1/3 cup canned cannellini (white kidney) beans, drained and rinsed
1/4 tsp. Italian seasoning
1 La Tortilla Factory Smart & Delicious Low Carb/High Fiber Large Tortilla
1 wedge The Laughing Cow Light Mozzarella, Sun-Dried Tomato & Basil cheese
1/4 cup sliced zucchini
1/4 cup sliced red bell pepper
1/4 cup chopped onion
1 piece The Laughing Cow Mini Babybel Light cheese, chopped
Optional toppings: low-fat marinara sauce, fat-free sour cream

Directions:
Place beans in a blender or food processor with 1 tbsp. water and blend until mostly smooth. (Or place beans in a bowl with 1 tbsp. water and mash with a fork.) Add Italian seasoning and mix well.

Lay tortilla flat and spread half of the upward-facing side with bean mixture. Spread cheese wedge on the other half and set aside.

Bring a skillet sprayed with nonstick spray to medium-high heat on the stove. Add veggies and, stirring occasionally, cook until softened, about 4 - 5 minutes. Transfer veggies to the side of the tortilla spread with the cheese wedge.

Top veggies evenly with chopped Babybel cheese. Fold bean-covered side of the tortilla over the other side and press gently to seal, forming the quesadilla.

Remove skillet from heat, re-spray with nonstick spray, and return to medium-high heat. Place quesadilla in the skillet and cook for about 2 minutes per side, until the outside is toasty and the inside is hot.

Cut into triangles and, if you like, top or serve with marinara sauce or sour cream. Now eat!

MAKES 1 SERVING 
Spicy EZ Mac 'n Cheesy

PER SERVING (1/4th of recipe, 1 heaping cup): 216 calories, 5.75g fat, 798mg sodium, 33.5g carbs, 5g fiber, 4.5g sugars, 8.5g protein -- PointsPlus® value 5*

Wowowow, this stuff is good! We took an already awesome HG recipe and gave it a Mexican-inspired makeover. Cilantro haters, fret not. Just leave it out...

Ingredients:
4 1/2 oz. (about 2 cups) dry uncooked whole-wheat-blend rotini pasta (like the kind by Ronzoni)
24 oz. (about 6 cups) frozen Green Giant Cauliflower & Cheese (or Three Cheese) Sauce
3 wedges The Laughing Cow Light Queso Fresco & Chipotle cheese
2 tbsp. finely chopped cilantro
1/2 tsp. chili powder
1/8 tsp. cayenne pepper
Salt and black pepper, to taste

Directions:
In a large pot, prepare pasta al dente (firm) according to the instructions on the package; drain well and set aside. While pasta is cooking, place contents of the cauliflower & sauce package(s) in a large microwave-safe bowl. Cover and microwave for 10 - 12 minutes, until sauce has melted and cauliflower is hot.

Once the bowl is cool enough to handle, remove it from the microwave and add cooked pasta. Unwrap cheese wedges and add those as well.

Mix thoroughly, ensuring that the Laughing Cow cheese is evenly distributed and the pasta and cauliflower are coated in cheese sauce. Add cilantro, chili powder, and cayenne pepper, and mix thoroughly. Season to taste with salt and pepper. Enjoy!

MAKES 4 SERVINGS 
Hot 'N Cold Buff Chick Scoopable Salad

PER SERVING (1/2 of recipe, about 1 cup): 138 calories, 2.5g fat, 783mg sodium, 4.5g carbs, 0.5g fiber, 2g sugars, 22.5g protein -- PointsPlus® value 3*

As soon as we heard that the Blue Cheese wedges were on the way, we starting dreaming of this recipe... YUM!!!!!


Ingredients:
2 wedges The Laughing Cow Light Blue Cheese
5 oz. cooked skinless lean chicken breast, chopped
1 1/2 tbsp. Frank's RedHot Original Cayenne Pepper Sauce
1/3 cup chopped celery
1/3 cup chopped carrots  

Directions:
Place cheese wedges in a large microwave-safe bowl and microwave for 20 seconds. Stir until smooth. Add chicken and hot sauce; stir well. Mix in celery and carrots. Refrigerate until chilled or enjoy immediately!
