I think a lot of people can relate to this. They want protein options other than chicken and beef, but they don't exactly know what to do with fish. Well, I happen to have some super-easy, extremely delicious recipes for you. By the way, if you want to save some money and trips to the store, keep fish fillets in the freezer and thaw 'em before cooking. (Just a little tip!) Okay, here are those recipes I was telling you about...

Woohoo! Bayou Fish Pack - This Cajun-inspired foil-pack recipe calls for flounder, beans, and other tasty items. Plus, the recipe name is just fun to say. Woohoo! Bayou... 

So-Fancy Fish Pack - Another foil-pack recipe. It's lemony and buttery and includes one of my favorite fancy vegetables... asparagus!

Grilled Go Fish! Soft Tacos - The guilt-free avocado-cream sauce takes this recipe for tilapia tacos to the next level. I love it!!! 

De-lish Fish 'n Chips - This is a swap for a fried fish platter, complete with HG's famous butternut squash fries. It's reeeeeeally good...

Crispy Creamy Salmon Bake - A great center-plate dish. I especially love the crunchy topping and tangy mustard sauce. YUM!

I've noticed that you recommend Brummel & Brown a lot in your recipes that call for some sort of butter. What's the deal? Why is it so special? What can I use instead, if my store doesn't carry it?

Dear Butter Curious,

You're right -- I am a little obsessed with the magical spreadable deliciousness that is Brummel & Brown. It's basically a light buttery spread that's made with yogurt. It tastes just like real butter -- maybe a little sweeter -- but it has HALF as much fat and half as many calories. If it isn't sold near you, don't panic. There are a lot of similar products with almost identical stats. Look for those labeled "light whipped butter" or "light buttery spread" with about 45 calories and 5g fat per tablespoon. Smart Balance, Promise, I Can't Believe It's Not Butter!, and Land O'Lakes all make 'em. Just make sure to get the spreadable kind in the TUBS, not the stuff in stick form. With the spreads, a little goes a looooooong way. And in case you're wondering, yes, there are some fat-free spreads out there with hardly any calories... but the light kinds taste SO MUCH BETTER. Try 'em and see! And by the way, your store likely does carry Brummel & Brown!
