Well, I happen to have some super-easy, extremely delicious recipes for you. By the way, if you want to save some money and trips to the store, keep fish fillets in the freezer and thaw 'em before cooking. (Just a little tip!) I've noticed that you recommend Brummel & Brown a lot in your recipes that call for some sort of butter. What's the deal? Why is it so special? What can I use instead, if my store doesn't carry it?

You're right -- I am a little obsessed with the magical spreadable deliciousness that is Brummel & Brown. It's basically a light buttery spread that's made with yogurt. It tastes just like real butter -- maybe a little sweeter -- but it has HALF as much fat and half as many calories. If it isn't sold near you, don't panic. There are a lot of similar products with almost identical stats. Look for those labeled "light whipped butter" or "light buttery spread" with about 45 calories and 5g fat per tablespoon. Smart Balance, Promise, I Can't Believe It's Not Butter!, and Land O'Lakes all make 'em. Just make sure to get the spreadable kind in the TUBS, not the stuff in stick form. With the spreads, a little goes a looooooong way. And in case you're wondering, yes, there are some fat-free spreads out there with hardly any calories... but the light kinds taste SO MUCH BETTER. Try 'em and see! And by the way, your store likely does carry Brummel & Brown!
