Lighter Lemon Bars

Makes 16 Lovely Lemon Bars

HG Says: "A light, lemony, low-cal treat!"

Ingredients:
1/4 cup confectioners sugar
3 tablespoons unsalted butter, softened
1/2 cup all-purpose flour
3 large eggs
3/4 cup granulated sugar
2 teaspoons grated lemon zest
1/3 cup fresh lemon juice
3 tablespoons all-purpose flour
1/2 teaspoon baking powder
1/8 teaspoon salt
confectioners' sugar, for dusting

Directions:
Preheat the oven to 350ºF. Beat the 1/4 cup of confectioners' sugar and butter on medium speed until creamy. Gradually add the 1/2 cup of flour, and mix on low speed until the mixture is crumbly. Next, press the mixture into the bottom of an 8-inch square baking pan, and bake until just golden brown (about 10 to 12 minutes). Cool on a wire rack. Lower the oven temperature to 325ºF. Whisk the eggs on medium speed until foamy. Add the sugar, lemon zest, lemon juice, 3 tablespoons of flour, baking powder and salt, and combine. Pour the mixture over the baked crust and bake until set, about 20 to 25 minutes. (Do not touch the filling with your fingers or it will stick to them.) Cool on a wire rack. Cut into 16 squares and dust with confectioners' sugar.

Brown Sugar Meringues

Makes 36 Magical Meringues 

HG Says: "A sweet, crunchy dream come true!"

Ingredients:
1/2 cup egg whites (about 4 large eggs)
a pinch of salt
1 cup brown sugar

Directions:
Preheat the oven to 300°F. Line 2 cookie sheets with parchment or wax paper. With an electric mixer, beat the egg whites and salt on high speed until soft peaks form. Continue mixing on high speed while adding 1/2 cup of the sugar. Add the remaining sugar by the tablespoon. Beat for another 1-2 minutes, until the mixture is stiff and shiny. Drop by the spoonful, onto the cookie sheets. Flatten each cookie slightly with the back of a spoon.  Bake until golden brown, about 30 minutes. Let cool.
