Sweet Cinnamon Fritter Fries
PER SERVING (1/3rd of recipe including syrup): 144 calories, 1g fat, 295mg sodium, 41g carbs, 12g fiber, 3g sugars, 5g protein -- PointsPlus® 4*
Ingredients: 1 medium-sized butternut squash (about 2 lbs. -- large enough to yield 14 oz. uncooked flesh) 1 cup Fiber One Original bran cereal 1/3 cup fat-free liquid egg substitute (like Egg Beaters) 1/4 cup Splenda No Calorie Sweetener, granulated 1 tsp. cinnamon 1/2 tsp. vanilla extract 1/8 tsp. salt
For Dipping: 1/2 cup sugar-free maple syrup
Preheat oven to 400 degrees. Spray a baking sheet with nonstick spray.
Peel squash and slice off the ends. Cut in half widthwise, just above the round section. Cut the round piece in half lengthwise and scoop out the seeds.
Cut squash into French-fry-shaped spears. (For exact nutritionals, measure out and use 14 oz. of squash.) Thoroughly pat dry.
In a blender or food processor, grind cereal into crumbs. Transfer to a wide bowl. Add Splenda, cinnamon, and salt, and mix well.
In another wide bowl, mix egg substitute with vanilla extract.
One at a time, coat squash spears with egg mixture, shake to remove excess, and coat with crumbs. Evenly place on the baking sheet.
Bake for 10 minutes. Flip spears and bake until mostly tender on the inside and crispy on the outside, about 10 minutes. Cooking time will vary depending on how thick your fries are.
Serve with syrup for dipping. MMMMMMM!!!!!!!

CHEW ON THIS: Today, November 29th, is National Lemon Creme Pie Day. Instead of an actual pie, go for some Yoplait Light yogurt in Lemon Cream Pie flavor. Yum!
