ASK HUNGRY GIRL
Do you have a recipe for a crustless pumpkin pie?
Keep the Crust
Dear Keep the Crust,
Yes! The HG version of crustless pumpkin pie is called Wayne's Pumpkin
Smash, and it can be found in the "Fun with Canned Pumpkin" section of my
first book, Hungry Girl: Recipes and Survival Strategies for Guilt-Free Eating
in the Real World. (Find that section in the "Fun With..." chapter!)
That "Smash" is REALLY low in calories! It's fantastic by itself, but it's also
amazing topped with light vanilla ice cream or Fat Free Reddi-wip (or BOTH!).
So do you have to buy the book to get that recipe? Nope -- I'm gonna give it
to you right now, because I'm nice and you need to try it!!! (BTW, if you want
to know who Wayne is, you will have to get the book!)

soft, like pie filling.)
Once ready to serve (it's delicious eaten hot or cold), cut into 9 pieces.
Serve and enjoy!

There it is -- hope you love it! BTW, store leftovers in the fridge... if you
I want to make your Cheesy Beefy Quesadilla, but I can't seem to find the
frozen "ground-beef-style" soy crumbles. Is there anything else I can use? I
have called or gone to all the local food stores and none of them have the
stuff... Please help!!!
Searching for Soy Crumbles
Hmmmm... those soy crumbles are usually pretty easy to find. Supermarkets
(especially ones with a good selection of vegetarian products, like Whole
Foods) and retail stores with freezer sections (like Target and Walmart)
should have them. Here are some tips for tracking them down...
1. The store employees you're talking to may not know exactly what or
where the crumbles are. Sometimes the product's called "meatless ground
burger," "soy protein," or "soy taco meat." So try asking for those.
2. They're usually located with the frozen vegetarian products (there are also
some refrigerated versions, next to the tofu), so make sure you're looking in
the right place. The kind by Morningstar Farms -- Meal Starters Grillers
Recipe Crumbles -- is the easiest to locate. (Try using this store locator.)
Boca is another popular brand to look for.
3. If you are 100% sure your store doesn't have them, then get your hands
on a box of Boca burgers (the 70-calorie Original Vegan ones, preferably) --
just cook or thaw one of those according to package directions, and (once
cool) break it up into small pieces/crumbles. That'll work fine!
Enjoy... By the way, I LOOOVE that quesadilla recipe!
