Dear Hungry Girl,

I saw you on Rachael Ray -- you had some sort of chocolate cake that was
made with pumpkin. Can you please give us the recipe? I saw a
brownie/muffin recipe on your site that looks similar, but it's not exactly the
same. Please tell me about this cake...

Dear Cake Me,

Boy, that cake is popular! Since the TV appearance, I have received this
question more than 146 times. Yep, the cake you saw on the RR show is very
similar to our Yum Yum Brownie Muffins (made famous in our daily emails
and the first HG cookbook!). It has just two ingredients: a box of chocolate
cake mix and a can of pure pumpkin. No eggs and no oil. This simple swap
adds just 145 calories and 1g fat to your entire cake, as opposed to the
1,190 calories and 125g fat the recommended eggs and oil add. Insanity!!!
And the cake tastes 100% chocolatey and delicious. Here's the recipe...

HG's Yum Yum Chocolate Cake

PER SERVING (1 slice, 1/12th of cake): 181 calories, 3.5g fat, 357mg
sodium, 37g carbs, 2g fiber, 20g sugars, 2g protein -- POINTS® value 4*

One 18.25-oz. box devil's food cake mix
One 15-oz. can pure pumpkin

Preheat oven to 400 degrees.

Mix the two ingredients together in a bowl. Don't add anything else that may
be mentioned on the box, such as eggs, oil, or water. The mixture will be
very thick, so you might be tempted to add in other things to make the
batter smoother. Do NOT do this! Just keep on stirring until completely mixed.

Transfer batter to a 9-inch cake pan sprayed with nonstick spray, and
smooth out the top with a spatula or the back of a spoon. Place pan in the
oven, and bake for 25 minutes, or until a toothpick inserted into the center of
the cake comes out clean.

Allow to cool, and then cut into 12 slices. Enjoy!


There you go -- consider yourself CAKED!
