Isn't that stuff AMAZING?! For those of you who don't know, the product's called So Delicious Unsweetened Coconut Milk Beverage, and it's a GREAT low-calorie milk drink. (Click here for more info.) I'm happy to say that I do have a smoothie recipe for you! My husband LOVES this chilly treat, so I'm naming it after him...





Dan-Good Coconut-Berry Smoothie
PER SERVING (entire recipe): 70 calories, 3.25g fat, 10mg sodium, 9g carbs, 1.75g fiber, 4.5g sugars, 1g protein -- PointsPlus® value 2*

Ingredients:
5 oz. (about 2/3 cup) So Delicious Unsweetened Coconut Milk Beverage
5 large strawberries
1/4 tsp. coconut extract
2 no-calorie sweetener packets (like Splenda or Truvia)

Directions:
Throw all the ingredients in a blender (use a Magic Bullet, if you've got one) and add LOTS of crushed ice (about a cup). Blend it, pour, and enjoy!

MAKES 1 SERVING

Try it and let me know what you think! By the way, if you want a protein boost, add half a scoop of some vanilla protein powder (just adjust the nutritionals accordingly). Happy sipping!

My friends and I love to have potlucks. I always bring Hungry Girl dishes, which people love! Now the pressure is on to keep bringing delicious, guilt-free food that is quick and easy to prepare. What recipes do you have that would be great for potlucks?

All Out of Potluck


You're in luck! (Sorry. Had to...) I've got plenty of fast recipes that are super-simple to whip up for your next get-together with potluck-loving pals. There are a few ways to go, so I'll break it down for you...

Appetizers and Sides - Here are some particularly decadent starters and side dishes that no one would ever suspect are guilt-free: Ab-Fab Artichoke Crab Dip (cheesy and fantastic), Hip-Hip-Hooray Chicken Satay (yesterday's recipe... perfect for potlucks!), I Heart Apple Slaw (a fun spin on standard slaw), and Pump-Up-the-Jam Cocktail Weenies (so cute... so delicious!).

Main Dishes - These will totally impress your friends, and they're so easy to prepare: Turkey & Veggie Meatloaf Minis (adorable and simple to make), Pow! Sock! Bam! Jambalaya (one-pot recipe!), Colossal Asian Veggie 'n Chicken Pack (foil packs = fast cleanup!), and Too-EZ Mac 'n Cheese (for your non-carnivorous pals).
