Hungry Girl Today: 03.31.11
That's right -- MORE three-ingredient recipes! These all-new TRIOS were inspired by three of the chapters in our latest cookbook, Hungry Girl 300 Under 300 -- Chicken Trios, Tuna Trios, and Meatless Burger Trios. (There are four additional TRIO chapters too!) Time to chew...
Ranch-O Bacon Chicken
PER SERVING (entire recipe): 186 calories, 3g fat, 429mg sodium, 1g carbs, 0g fiber, 0.5g sugars, 35g protein -- PointsPlus® value 4*
So much flavor... so few ingredients. Rock on, chicken cutlet!
One 5-oz. raw boneless skinless lean chicken breast cutlet
1/2 tsp. dry ranch dressing/dip mix
1 tbsp. precooked real crumbled bacon (like the kind by Oscar Mayer)
Spices: black pepper
Preheat oven to 375 degrees.
Spray a baking pan with nonstick spray. Season each side of the chicken with a dash of black pepper, and then place the chicken in the pan. Season the top of the chicken with ranch dressing/dip mix.
Evenly place bacon over the top of the chicken. Use a spatula or the back of a spoon to gently press down and help the bacon adhere.
Bake in the oven until chicken is fully cooked, 20 - 25 minutes.

Tuna Melt Bites
PER SERVING (1/3rd of recipe, 5 pieces): 143 calories, 5g fat, 452mg sodium, 11g carbs, 0g fiber, 1g sugars, 14g protein -- PointsPlus® value 4*
We could eat an entire batch of these by ourselves in one sitting -- good thing they're so low in calories!
One 15-piece box frozen Athens Mini Fillo Shells
3 wedges The Laughing Cow Light Creamy Swiss cheese
One 5-oz. can albacore tuna in water, drained and flaked
Spices: salt, black pepper
Preheat oven to 350 degrees.
Place shells on a baking sheet sprayed lightly with nonstick spray. Bake in the oven until shells are golden brown, about 5 minutes. Set aside to cool.
Place cheese wedges in a microwave-safe bowl and microwave for 30 seconds, or until softened. Stir until smooth. Add tuna and a dash each salt and pepper. Mix well.
Evenly distribute the cheesy-tuna mixture among the baked shells, about half a tablespoon per shell.

Saucy Eggplant-Patty Tower
PER SERVING (entire recipe): 279 calories, 6g fat, 905mg sodium, 31.5g carbs, 15g fiber, 9g sugars, 25g protein -- PointsPlus® value 6*
Sometimes, we like to stack a few things we love into a big pile. A big, delicious pile.
2 frozen meatless hamburger-style patties with about 100 calories each
Three 3/4-inch-thick eggplant slices (about the same size and shape of the patties), patted dry if needed
1/2 cup canned crushed tomatoes
Spices: Italian seasoning
Bring a large skillet sprayed with nonstick spray to medium heat on the stove. Working in batches as needed, cook patties and eggplant slices until cooked through, about 5 minutes per side; re-spray skillet between batches.
Meanwhile, to make the sauce, combine tomatoes with 1/4 tsp. Italian seasoning in a microwave-safe bowl. Microwave for 20 seconds, or until hot. Mix well. If you like, add additional Italian seasoning.
Plate one eggplant slice and top with a spoonful of sauce; evenly top with a burger patty and another spoonful of sauce. Alternate layering the remaining eggplant slices and burger patty, adding a spoonful of sauce in between each layer. Cover your "tower" with all of the remaining sauce.
Grab a fork and knife and dig in!

HG FYI: If made with 70-calorie Boca Original Vegan Veggie/Meatless Burgers, your tower will have 219 calories, 1.5g fat, 775mg sodium, 29.5g carbs, 15.5g fiber, 8.5g sugars, and 29g protein (PointsPlus® value 5*).
