In the midst of a season full of decadent food, we've decided to toss you a couple of super-indulgent, yet timeless, brownie-centric treats. And since they're HG recipes, you know you can chow down without guilt. HOORAY!


Gooey Caramel Coconut Brownies

PER SERVING (1/16th of recipe, 1 brownie): 165 calories, 3.5g fat, 298mg sodium, 32.5g carbs, 2g fiber, 17.5g sugars, 2g protein -- PointsPlus® value 4*

It's as if the best part of German chocolate cake hopped on top of a pan of brownies. What's NOT to like about that?

Ingredients:
One 18.25-oz. box moist-style devil's food cake mix

One 15-oz. can pure pumpkin (Libby's is best!)
1 sugar-free caramel pudding snack with 60 calories or less (like the kind by Snack Pack)
1/4 cup light or fat-free caramel dip (like the kinds by Marzetti) 

2 tbsp. finely chopped pecans
2 tbsp. shredded sweetened coconut, chopped

Directions:
Preheat oven to 400 degrees. Spray a 9" X 13" baking pan with nonstick spray and set aside. 



In a large bowl, combine cake mix with pumpkin. Stir until blended. (Batter will be thick.) Spread into the baking pan and smooth out the top. (See HG Tip!)

Bake in the oven until a toothpick inserted into the center comes out clean, 20 - 25 minutes. Let cool completely.

Meanwhile, in a medium bowl, combine pudding, caramel dip, pecans, and coconut. Mix well. Cover and refrigerate until brownies are ready to serve.

Evenly spread pudding mixture over brownies. Slice and enjoy! (Refrigerate leftovers.)

MAKES 16 SERVINGS

HG Tip! Spray a spatula with nonstick spray and use to smooth out the batter in the pan; the spray will keep the batter from sticking to the spatula.



Bananas for Brownies Parfait

PER SERVING (entire recipe): 220 calories, 4g fat, 370mg sodium, 46g carbs, 2.5g fiber, 18.5g sugars, 4.5g protein -- PointsPlus® value 6*

We love pairing chocolatey goodness with fruit -- it makes us feel better when we indulge. Banana comes out to play in this guilt-free concoction for one...

Ingredients:
2 tbsp. moist-style devil's food cake mix
1/2 tbsp. fat-free liquid egg substitute (like Egg Beaters Original)
1 sugar-free chocolate pudding snack with 60 calories or less (like the kind by Jell-O)
1/2 medium banana, sliced
1 tsp. mini semi-sweet chocolate chips

Directions:
In a microwave-safe mug or bowl sprayed with nonstick spray, combine cake mix, egg substitute, and 1/2 tbsp. water. Add 2 tbsp. pudding (about 1/3rd of the snack) and mix well.

Microwave for 1 minute. Once completely cool, crumble with a fork.

Place half of the chocolate crumbles in a parfait glass (or any glass). Top with half of the remaining pudding (about 2 tbsp.), half of the banana slices, and 1/2 tsp. chocolate chips.

Repeat layering with remaining chocolate crumbles, pudding, banana slices, and 1/2 tsp. chocolate chips. Enjoy!
