When it comes to simple guilt-free recipes, you can never have too many. Check out these new TRIOS, a.k.a. three-ingredient creations -- they ROCK!

Gooey Mushroom Quesadilla

PER SERVING (1 quesadilla): 203 calories, 5.5g fat, 740mg sodium, 30.5g carbs, 7g fiber, 5g sugars, 11.5g protein -- PointsPlus® value 5*

Forget meat -- all you need are mushrooms, guilt-free cheese, and a tortilla for a tasty mini-meal!

1 cup finely chopped portabella mushrooms
2 wedges The Laughing Cow Light Creamy Swiss cheese
1 medium-large high-fiber tortilla with about 110 calories or less (like the kinds by La Tortilla Factory)
Seasonings: garlic powder, black pepper

Bring a large skillet sprayed with nonstick spray to medium-high heat. Cook and stir mushrooms until softened, about 3 minutes.

Transfer mushrooms to a bowl and thoroughly mix in cheese wedges, breaking the wedges into pieces as you add them. Stir in a dash each garlic powder and black pepper.

Lay tortilla flat and spread one half with the mushroom-cheese mixture. Fold the other half over and press gently to seal.

If needed, clean skillet. Re-spray and return to medium-high heat. Cook quesadilla until crispy, about 2 minutes per side.
 Slice into wedges and eat up!


EZ Egg Faux Young

PER SERVING (entire recipe, about 4 pancakes with gravy): 157 calories, 1g fat, 763mg sodium, 15g carbs, 4g fiber, 5g sugars, 21.5g protein -- PointsPlus® value 4*

Super-simple and lighter than any egg foo young you'd get at a restaurant...

3/4 cup fat-free liquid egg substitute (like Egg Beaters Original)
1 1/2 cups roughly chopped bagged broccoli cole slaw
1/3 cup mushroom gravy
Spices: black pepper, garlic powder, onion powder, ground ginger
Optional topping: chopped scallions

In a large bowl, whisk egg substitute with a dash of each spice until well mixed.

Bring a large skillet sprayed with nonstick spray to medium heat. Cook and stir broccoli slaw until mostly softened, about 5 minutes.

Stir broccoli slaw into egg mixture in the bowl.

Remove skillet from heat, re-spray, and bring to medium-high heat. Add mixture in evenly spaced 1/4-cup heaps (about 4), working in batches as needed; use a spatula to flatten and form into small pancakes. Cook for 1 - 2 minutes per side, until golden brown and cooked through.

In a small microwave-safe bowl, microwave gravy for 30 seconds, or until hot. Pour over pancakes or serve on the side!


Cobby Cordon Bleu

PER SERVING (1 stuffed cutlet): 217 calories, 4.5g fat, 835mg sodium, 2g carbs, 0g fiber, 1g sugars, 37g protein -- PointsPlus® value 5*

Three ingredients fusing together two classic dishes. This chicken rollup RULES...

One 5-oz. raw boneless skinless chicken cutlet, pounded to 1/2-inch thickness
1 wedge The Laughing Cow Light Blue Cheese
1 tbsp. precooked real crumbled bacon (like the kind by Oscar Mayer)
Seasonings: salt, black pepper

Preheat oven to 350 degrees. Spray a baking pan with nonstick spray.

Season chicken with 1/8 teaspoon each salt and black pepper. Lay chicken flat, spread with cheese, and sprinkle with bacon.

Tightly roll up chicken and secure with toothpicks. Place in the baking pan, seam side down.

Cover pan with foil and bake for 20 minutes.

Remove foil and bake until chicken is cooked through, about 15 minutes. Enjoy!


HG Tip! To pound the chicken cutlet, lay it between two pieces of plastic wrap or place it in a sealable bag, squeeze out the air, and seal. Then use a meat mallet to pound it.
