Cherry Cobbler Parfait

Entire recipe: 236 calories, 2g fat, 137mg sodium, 45.5g carbs, 2.5g fiber, 34.5g sugars, 8.5g protein -- PointsPlus® value 6*

NEED cobbler but don't wanna deal with a heavy baking commitment... or the multiple servings? Solution: this recipe!

Ingredients:
1/2 cup frozen dark sweet pitted cherries, thawed (not drained of excess liquid)
2 tsp. brown sugar
1/2 tsp. cornstarch
1 tbsp. old-fashioned oats
1/2 tbsp. all-purpose flour
1 tsp. light whipped butter or light buttery spread (like Brummel & Brown)
Dash cinnamon
6 oz. (about 3/4 cup) fat-free vanilla yogurt

Directions:
In a small nonstick pot, combine cherries (along with any excess liquid from thawing), 1/2 tsp. brown sugar, and cornstarch. Add 2 tbsp. cold water and stir. Bring to medium heat. Cook and stir until thickened, about 6 minutes.

Transfer mixture to a bowl and refrigerate until chilled, about 40 minutes.

In a small microwave-safe bowl, mix oats, flour, butter, cinnamon, and remaining 1 1/2 tsp. brown sugar. Mash and stir until well mixed and crumbly. Microwave for 45 seconds, or until firm.

In a mid-sized glass, layer half of each ingredient: yogurt, cherry mixture, and oat mixture. Continue layering with remaining ingredients and enjoy!

Rocky Road Softies

Ingredients:
1/4 cup brown sugar (not packed)
2 tbsp. Splenda No Calorie Sweetener (granulated)
2 tbsp. light whipped butter or light buttery spread (like Brummel & Brown), room temperature
2 tbsp. no-sugar-added applesauce
2 tbsp. fat-free liquid egg substitute (like Egg Beaters Original)
1/4 tsp. vanilla extract
1/3 cup whole-wheat flour
2 packets hot cocoa mix with 20 - 25 calories each (like Swiss Miss Diet or Nestlé Fat Free)
1/4 tsp. baking powder
1/8 tsp. salt
1/2 cup old-fashioned oats
2 tbsp. mini semi-sweet chocolate chips
2 tbsp. sliced almonds, roughly chopped
24 mini marshmallows (about 1/4 cup)

Directions:
Preheat oven to 350 degrees. Spray a baking sheet with nonstick spray.

In a medium bowl, thoroughly whisk brown sugar, Splenda, butter, applesauce, egg substitute, and vanilla extract. Add flour, cocoa mix, baking powder, and salt, and stir until smooth. Fold in oats, chocolate chips, and chopped almonds.

Spoon batter onto the sheet in 6 evenly spaced mounds. Use the back of a spoon to spread and flatten into 3-inch circles.

Bake until a toothpick inserted into the center of a softie comes out mostly clean, about 9 minutes. Leave oven on.

Meanwhile, cut each marshmallow into 2 coin-shaped halves.

Top each softie with 8 marshmallow halves, cut sides down. Bake until marshmallows just begin to melt, 1 to 2 minutes. (Do not overbake, as marshmallows will completely melt.) Enjoy!

MAKES 6 SERVINGS

HG Heads-Up: If refrigerating leftovers, let cool completely first.
