Most of us need a good grilled cheese sandwich now and then. Read on for three new sandwiches that melt in your mouth... and in your pan!




Grilled Cheese Dunkin' Duo
Entire recipe: 257 calories, 8.5g fat, 989mg sodium, 30g carbs, 6g fiber, 10g sugars, 17.5g protein -- PointsPlus® value 7*

Grilled cheese with tomato soup is a classic combo, so we made a guilt-free version, dunker-style. Two-in-one comfort food!

Ingredients:
2 slices light bread
1 slice fat-free American cheese
1 piece Mini Babybel Light cheese, chopped
2 tsp. light whipped butter or light buttery spread (like Brummel & Brown)
1/2 cup reduced-sodium creamy tomato soup with 4g fat or less per serving (like Amy's Organic Light in Sodium Chunky Tomato Bisque)

Directions:
Top one slice of bread with the cheese slice, and sprinkle with chopped cheese. Top with remaining bread slice. Spread the top of the sandwich with 1 tsp. butter.

Bring a skillet sprayed with nonstick spray to medium-high heat. Place sandwich in the skillet, buttered side down. Spread the top with remaining 1 tsp. butter.

Cook until bread is lightly browned and cheese has melted, about 2 minutes per side, flipping carefully.

Microwave soup in a microwave-safe bowl for 1 minute, or until hot. Slice sandwich into 4 sticks and serve with the soup for dunking!

Greek Grilled Cheese
Entire recipe: 202 calories, 8.5g fat, 640mg sodium, 21g carbs, 5g fiber, 4g sugars, 11g protein -- PointsPlus® value 5*

We recommend making this recipe while changing the words to disco classics. We'll start -- "Ahhhhh... Greek out! Le Greek, c'est chic..."

Ingredients:
2 slices light bread
1 wedge The Laughing Cow Light Creamy Swiss cheese
2 tbsp. crumbled reduced-fat feta cheese
1 tbsp. diced and seeded tomato
1 tbsp. diced red onion
1 tbsp. chopped basil
2 tsp. light whipped butter or light buttery spread (like Brummel & Brown)

Directions:
Lay bread slices flat and spread both with the cheese wedge. Top one slice with feta cheese, tomato, onion, and basil. Top with the other bread slice, cheesy side down. Spread the top of the sandwich with 1 tsp. butter.

Bring a skillet sprayed with nonstick spray to medium-high heat. Place sandwich in the skillet, buttered side down. Spread the top with remaining 1 tsp. butter.

Cook until bread is lightly browned and cheese has melted, about 2 minutes per side, flipping carefully. Eat up!

Apple 'n Jack Grilled Cheese
Entire recipe: 236 calories, 10g fat, 459mg sodium, 27g carbs, 6g fiber, 7g sugars, 13.5g protein -- PointsPlus® value 6*

This sweet, cheesy item will appeal to your inner child as well as your grown-up taste buds.

Ingredients:
1/4 cup peeled and chopped apple
1/4 cup chopped onion
2 slices light bread
1 oz. reduced-fat block-style Monterey Jack cheese, shredded (about 1/4 cup)
2 tsp. light whipped butter or light buttery spread (like Brummel & Brown)

Directions:
Bring a skillet sprayed with nonstick spray to medium-high heat. Cook and stir apple and onion until slightly softened and browned, about 8 minutes.

Top one slice of bread with 2 tbsp. shredded cheese, followed by cooked apple and onion. Sprinkle with remaining 2 tbsp. cheese, and top with the remaining bread slice. Spread the top of the sandwich with 1 tsp. butter.

Remove the skillet from heat, re-spray, and return to medium-high heat. Place sandwich in the skillet, buttered side down. Spread the top with remaining 1 tsp. butter.

Cook until bread is lightly browned and cheese has melted, about 2 minutes per side, flipping carefully. Dig in!
