GIRLS BITE OUT

When it comes to Edible Idol royalty, mac 'n cheese is queen of the castle! What cheese-loving human doesn't crave pasta smothered in cheesy sauce? Read up for our top picks, tips & tricks for guilt-free mac 'n cheese...

Cheesy (and Sometimes Freezy) Hits!

FiberGourmet Mac-mmm-Cheese
One 2.5-oz. serving, not prepared (1/3rd of box): 160 calories, 1g fat, 660mg sodium, 50g carbs, 18g fiber, 7g sugars, 7g protein -- PointsPlus® value 5*

This mac is tasty in a way that's absolutely comparable to the standard blue box variety. And check out the stats -- EIGHTEEN grams of fiber! Prepared according to box directions, with a little 2% milk, each serving has just 190 calories and 2g fat. You can't easily find the stuff in stores, but it's totally worth ordering online. (While you're ordering, check out FiberGourmet's other delicious, fiber-packed items!)

Weight Watchers Smart Ones Classic Favorites Macaroni & Cheese
One 10-oz. meal: 270 calories, 2g fat, 790mg sodium, 52g carbs, 2g fiber, 5g sugars, 11g protein -- PointsPlus® value 7

Can't be trusted around multiple servings of cheesy macaroni, or just too pressed for time to boil up a batch of noodles? Frozen entrée time! This is a longtime favorite of ours, and one that you can enjoy for under 300 calories. Look at you, smarty pants!

Lean Cuisine Simple Favorites Macaroni & Cheese
One 10-oz. meal: 280 calories, 6g fat, 570mg sodium, 43g carbs, 1g fiber, 5g sugars, 14g protein -- PointsPlus® value 7*

Another M&C pick from the freezer aisle! There's no such thing as too many convenient, guilt-free options when it comes to cheesy, noodle-y comfort food. Grab it, nuke it, and chew it! (Okay, let it cool a little first.)

Kraft Macaroni & Cheese Dinner Made with 50% Whole Grain
One 2.5-oz. serving, not prepared (about 1/3rd of box): 260 calories, 3.5g fat, 590mg sodium, 49g carbs, 5g fiber, 6g sugars, 8g protein -- PointsPlus® value 7*

Honesty time: When it comes to mac, we DO talk a bit of trash about Kraft's basic boxed mix. Even this fibered-up variety delivers a pretty small serving size for the calorie count -- prepared with standard box directions, each cup has about 390 calories and 17g fat. BUT we came up with an AMAZING guilt-free recipe using this stuff and some HG-style tricks. Check out our super-sized recipe, as seen on the Dr. Oz Show!

Up & Coming Superstar!

House Foods Tofu Shirataki Macaroni Shaped Noodle Substitute
One 4-oz. serving (1/2 bag): 20 calories, 0.5g fat, 15mg sodium, 3g carbs, 2g fiber, 0g sugars, 1g protein -- PointsPlus® value 0*

Have you tried this latest variety of our favorite guilt-free pasta swap? If not, it's time! Find it stocked with the tofu in select markets, or order some online. And of course we have a recipe for no-guilt mac and cheese using these low-carb noodles... CLICK!

DIY Easy Mac 'n Cheesy Tips!

Choose Fiber-Packed Pasta: When it comes to regular dry pasta, choose macaroni noodles with at least 4g fiber per serving. Barilla's Whole Grain, White Fiber, and PLUS varieties all fit the bill. By the way, actual macaroni-shaped pasta is not necessary -- any short-shaped pasta will do!

Add Steamed Veggies: Cauliflower is the ultimate option -- it blends in seamlessly! Broccoli, zucchini, and (our latest discovery) butternut squash also work really well. (Bonus points if the veggies come in a low-fat cheese sauce, like the kinds by Green Giant!)

Mix Your Own Sauce: Essential add-ins include soft meltable cheeses and a creamy ingredient. Our favorite combo? The Laughing Cow Light Creamy Swiss + 2% American cheese + light sour cream = SUPER tasty! P.S. Adding a wedge of LCL is a great way to boost the flavor of pre-sauced frozen veggies.

Pump Up the Protein: If you're planning on eating mac as a one-course meal, you may want to add in some kind of protein. Lean ground turkey, chopped grilled chicken, and even diced tofu are awesome options!
