<br>One of our favorite things to do is make over the heavy pasta dishes typically served at restaurants. This new creation has tons of fantastic flavor, with a fraction of the calories of the original. (That's kind of our thing!)
<br>

<br>Ingredients:
<br>1 bag House Foods Tofu Shirataki Fettuccine Shaped Noodle Substitute
<br>4 oz. raw shrimp, peeled, tails removed, deveined
<br>1 tsp. lime juice
<br>1/4 tsp. chili powder
<br>1 tsp. fat-free sour cream
<br>1/2 tsp. chopped garlic
<br>1 wedge The Laughing Cow Light Queso Fresco & Chipotle cheese
<br>2 tbsp. black bean and corn salsa
<br>1 tbsp. chopped fresh cilantro
<br>

<br>Directions:
<br>Use a strainer to rinse and drain noodles. Thoroughly pat dry. Roughly cut noodles. 
<br>

<br>Bring a skillet sprayed with nonstick spray to medium heat. Add shrimp, top with lime juice, and stir. Sprinkle with chili powder. Cook and stir for about 4 minutes, until cooked through.

<br>Transfer shrimp to a medium bowl, and cover to keep warm.
<br>

<br>Remove skillet from heat. Clean, if needed. Re-spray and return to medium heat. Add noodles, sour cream, garlic, and cheese wedge, breaking the wedge into pieces.
<br>

<br>Cook and stir until cheese has melted, mixed with sour cream, and coated noodles, 2 - 3 minutes. Transfer to a plate or bowl.

<br>Top with shrimp, salsa, and cilantro. Yum time!

<br>We're generally good at selecting smart entrées off the menu, but that doesn't mean we're not tempted by the decadent dishes. And cheesy fettuccine dressed up with black bean 'n corn salsa and chipotle lime shrimp? Um, that's not gonna escape our attention! However, stats like these -- over a thousand calories and WELL over 4,000mg sodium -- make us shrink away in horror. So we stick to the Under 550 Calories and Weight Watchers menus at Applebee's, and we re-create indulgent menu items like this at home! Tofu Shirataki noodles are a must for this makeover, as is the spicy wedged cheese from The Laughing Cow. Add a few other smart swaps, and voilà! You are now entering delicious town...
