If grilled cheese were the only kind of sandwich we were allowed to eat, it wouldn't bother us at all. Not when there are SO MANY incredible guilt-free variations!!! Check out the latest GC recipes to come out of the HG kitchen...


Taco-rific Grilled Cheese 
Entire recipe: 240 calories, 9.5g fat, 681mg sodium, 24.5g carbs, 7g fiber, 4g sugars, 16.5g protein -- PointsPlus® value 6*




This recipe is like the beautiful love child of a taco and a grilled cheese sandwich... AHHHHHH!!!!




Ingredients:
1/4 cup frozen ground-beef-style soy crumbles (like the kind by Boca or MorningStar Farms)
1 tbsp. finely chopped onion
1/4 tsp. chili powder
1/8 tsp. cumin
1/8 tsp. garlic powder
2 slices light bread
1 wedge The Laughing Cow Light Creamy Swiss cheese
2 tbsp. shredded reduced-fat Mexican-blend cheese
1 tbsp. finely chopped tomato
1 tsp. finely chopped cilantro
2 tsp. light whipped butter or light buttery spread (like Brummel & Brown) 




Directions: 
In a small microwave-safe bowl, mix soy crumbles, onion, and dry spices. Microwave for 45 seconds, or until warm. Stir well. 




Lay bread slices flat, and spread both with the cheese wedge. Top one slice with 1 tbsp. shredded cheese, followed by the soy crumble mixture, tomato, cilantro, and remaining 1 tbsp. shredded cheese. Top with the other bread slice, cheesy side down. Spread the top of the sandwich with 1 tsp. butter. 




Bring a skillet sprayed with nonstick spray to medium-high heat. Carefully place sandwich in the skillet, buttered side down. Spread the top with remaining 1 tsp. butter. 




Cook until bread is lightly browned and cheese has melted, about 2 minutes per side, flipping carefully. Eat up!




MAKES 1 SERVING





Melty Mushroom-Swiss Grilled Cheese 
Entire recipe: 240 calories, 9g fat, 750mg sodium, 26g carbs, 6g fiber, 6g sugars, 13g protein -- PointsPlus® value 6*




This grilled cheese is 1. fancy, 2. schmancy, and 3. INCREDIBLY DELICIOUS! What more could you ask for?!




Ingredients:
1/2 cup sliced baby bella mushrooms
1/4 cup chopped onion
2 slices light bread
1 wedge The Laughing Cow Light Creamy Swiss cheese
1 slice 2% milk Swiss cheese
2 tsp. light whipped butter or light buttery spread (like Brummel & Brown)




Directions:
Bring a skillet sprayed with nonstick spray to medium heat. Cook and stir mushrooms and onion until softened and browned, 6 - 8 minutes. 




Lay bread slices flat and spread both with the cheese wedge. Top one slice with the cheese slice and cooked veggies. Top with the other bread slice, cheesy side down. Spread the top of the sandwich with 1 tsp. butter.




Remove the skillet from heat, re-spray, and return to medium-high heat. Place sandwich in the skillet, buttered side down. Spread the top with remaining 1 tsp. butter. 




Cook until bread is lightly browned and cheese has melted, about 2 minutes per side, flipping carefully. Dig in!




MAKES 1 SERVING
