The lunch break is generally a very special time in one's workday. So why shouldn't you have very special lunches? These make-ahead recipes are perfect!





Veggie-Packed Antipasto Pasta Salad 
1/4th of recipe (about 3 cups): 298 calories, 7g fat, 635mg sodium, 48.5g carbs, 7.5g fiber, 9.5g sugars, 15g protein -- PointsPlus® value 8* 




We gave traditional antipasto flavors a modern makeover, complete with the nutritional powerhouse known as kale. Future classic, people!




Ingredients:
6 oz. (about 2 cups) uncooked high-fiber rotini pasta
2 cups finely chopped kale
2 cups halved cherry tomatoes
2 cups quartered mushrooms
1 cup chopped cucumber
1 cup chopped red bell pepper
1 cup chopped red onion
1/3 cup light Italian dressing
16 slices turkey pepperoni, quartered
2 sticks light string cheese, cut into coins
1/4 cup sliced jarred pepperoncini (drained)




Directions:
Prepare pasta according to package instructions. Drain and rinse with cold water. Transfer to an extra-large bowl.




Add all ingredients to the bowl, and toss to mix.




Serve it up! (Cover and refrigerate leftovers.)




MAKES 4 SERVINGS




Fruity Tuna Salad 
Entire recipe: 275 calories, 8g fat, 477mg sodium, 33g carbs, 6g fiber, 22.5g sugars, 21g protein -- PointsPlus® value 7* 




Fruit, veggies, and tuna are all great for you, but did you know they taste great together in one dish? It's true! This is one of our best tuna salads EVER. 




Ingredients:
One 2.6-oz. pouch albacore tuna in water
1/4 cup chopped apple
1/4 cup halved red seedless grapes
1/4 cup chopped cucumber
2 tbsp. sweetened dried cranberries
1 1/2 tbsp. light mayonnaise 
4 cups chopped romaine lettuce
Optional: low-fat or fat-free balsamic vinaigrette




Directions:
In a medium container with a lid, combine all ingredients except lettuce and vinaigrette. Mix well.




Just before eating, top lettuce with tuna mixture. Drizzle with vinaigrette, if you like!
