We switched out conventional stuff associated with tostadas for other delicious items. Crunch time!




 
 




Tostada Mediterraneana 
1/2 of recipe (1 tostada): 169 calories, 5.5g fat, 452mg sodium, 15g carbs, 1g fiber, 3g sugars, 13.5g protein -- PointsPlus® value 4* 




This recipe is fresh, flavorful, and loaded with things we love. It's a must-try, people!




Ingredients: 
Two 6-inch corn tortillas 
3 oz. cooked and shredded (or finely chopped) skinless chicken breast 
1 tbsp. light balsamic vinaigrette 
1/2 tbsp. chopped basil 
1/4 cup jarred roasted red peppers packed in water, drained and chopped 
2 tbsp. sliced kalamata olives 
2 tbsp. crumbled reduced-fat feta cheese 
2 tbsp. diced red onion 




Directions: 
Preheat oven to 400 degrees. Spray a baking sheet with nonstick spray. 




Lay tortillas flat on the sheet, and spray with nonstick spray. 




Bake for 5 minutes. 

 




Carefully flip tortillas, and bake until crispy, 3 - 5 minutes. 




Place chicken in a medium bowl. Add vinaigrette and basil, and toss to coat. 




Evenly top tortillas with chicken and remaining ingredients. Enjoy!

BLT Tostada 
1/2 of recipe (1 tostada): 149 calories, 7g fat, 488mg sodium, 14.5g carbs, 2g fiber, 2.5g sugars, 8g protein -- PointsPlus® value 4* 




Since a tostada is a little like an open-faced sandwich, we had zero qualms about loading one up with bacon, lettuce, and tomato. A ranch sauce seals the deal! 




Ingredients: 
Two 6-inch corn tortillas
5 slices center-cut bacon or turkey bacon
1 1/2 tbsp. fat-free mayonnaise 
1/4 tsp. ranch dressing/dip seasoning mix 
3/4 cup shredded lettuce 
1/2 cup finely chopped tomatoes




Directions:
Preheat oven to 400 degrees. Spray a baking sheet with nonstick spray.




Lay tortillas flat on the sheet, and spray with nonstick spray.




Bake for 5 minutes. 





Carefully flip tortillas, and bake until crispy, 3 - 5 minutes.




Cook bacon until crispy, either in a large skillet over medium heat or on a microwave-safe plate in the microwave. (See package for cook time.) Chop or crumble bacon. 




In a medium bowl, mix ranch seasoning into mayo. Add lettuce and stir to coat.




Evenly top tortillas with lettuce mixture, tomatoes, and chopped/crumbled bacon. Enjoy!
