HG's Ginger Spiced Softies

Major Softies!
We LOVE baked goods. And since we're not gonna give up eating sweet treats anytime soon, guilt-free recipes like this one will keep on coming. Today's batch is full of sweetness, spice, and everything HG...

1/4 cup brown sugar (not packed)
2 tbsp. granulated white sugar (or HG Alternative)
2 tbsp. light whipped butter or light buttery spread, room temperature
2 tbsp. fat-free liquid egg substitute (like Egg Beaters Original)
1 1/2 tbsp. molasses
1/4 tsp. vanilla extract
1/3 cup whole-wheat flour
1/2 tsp. cinnamon
1/2 tsp. ground ginger
1/4 tsp. baking powder
1/8 tsp. ground nutmeg
1/8 tsp. salt
3/4 cup old-fashioned oats

Preheat oven to 350 degrees. Spray a baking sheet with nonstick spray.

In a medium bowl, combine brown sugar, white sugar, butter, egg substitute, molasses, and vanilla extract. Whisk thoroughly.

Add flour, cinnamon, ginger, baking powder, nutmeg, and salt. Stir until smooth.

Stir in oats. Spoon batter onto the sheet in 6 evenly spaced mounds. Use the back of a spoon to spread and flatten into 3-inch circles.

Bake until a toothpick inserted into the center of a softie comes out clean, about 10 minutes. Yum!

Bottom line: They can be hard to resist. And one might even believe they're a better choice than other cookies, right? (No chocolate, no nuts, no chunks.) But alas, one would be wrong, as ginger molasses cookies are made with SO MUCH sugar and butter. Sadly, that's the way it is with most cookies. Which is why these were next on our list to make over as HG softies. Sink your teeth into our soft 'n chewy treats! They've got yummy molasses flavor spiked with that classic ginger zing. 'Tis the season!
