Dear Hungry Girl,
I need guilt-free ideas for my Memorial Day cookout! My family loves burgers, hot dogs, and lots of side dishes. How can I indulge -- and please my guests -- without sabotaging my diet?
You've come to the right place. Memorial Day is the unofficial start of summer and a great time to celebrate! But it's too easy to consume thousands of calories in one sitting if you're not careful. Here are some recipes and finds for that backyard BBQ...
Burgers - A few years back, we debuted our first "outside-in" burger, and we've been stuffing patties ever since. They go over really well at backyard bashes -- everybody loves them! Try these Hawaiian-style and cheesy BBQ burgers, plus this classic Bacon Cheeseburger Patty. And these Buffalo-Style Blue Cheese Burgers aren't stuffed, but they do ROCK. Yum! As for store finds, I recently discovered Gourmet Chicken Grillers from Al Fresco, and Jennie-O Lean Turkey Burger Patties are great. And I always have a box of Boca Original Vegan Veggie/Meatless Burgers on hand!
Hot Dogs - I tend to go for hot dogs that are relatively low in fat with 70 calories or less each, like Hebrew National 97% Fat Free Beef Franks and Applegate Natural Uncured Chicken and Uncured Turkey Hot Dogs. For some awesome hot dog recipes, check out these ideas from earlier this month: the Mexicali-Style Hot Dog (with a DIY guac!) and Bacon BBQ Slaw Dog. Soooo good! And these regional makeovers -- Hot Kansas City Dog and Fully Loaded Chi-Dog -- are fantastic no matter where you live.
Skewers - Food on a stick makes for a great addition to any cookout. We've got veggie skewers with sauce, sweet 'n spicy steak kebabs, buffalo chicken skewers, teriyaki tofu on a stick... even fruit skewers! And the Saucy BBQ Seafood Skewers with Not-So-Secret BBQ Sauce, as seen on the "Hungry... Grill" episode of Hungry Girl, are a personal favorite.
Side Dishes - No BBQ spread is complete without some (guilt-free) sides. My number-one recommendation? I Can't Believe It's Not Potato Salad! I also love this Pineapple Black Bean Protein Topper -- it's like a salsa that goes well on burgers, dogs, seafood, and more. A good slaw is another must-have... Check out this Tangy Tex-Mex Slaw!
