Hungry Girl's Nutty Apple Muffins

Fruity Cutie!
Say goodbye to morning grumpiness -- we're putting the "good" in "good morning" with a healthy new recipe! Bake up a batch of these apple-walnut muffins ahead of time, and all you'll need to do in the a.m. is make the coffee...

Prep: 15 minutes
Cook: 20 minutes

Ingredients: 

1 1/2 cups whole-wheat flour 

1/2 cup all-purpose flour 

2 tsp. baking powder 

1 tsp. cinnamon 

1/2 tsp. baking soda 

1/8 tsp. salt 

1 cup no-sugar-added applesauce 

1/2 cup fat-free liquid egg substitute (like Egg Beaters Original) 

1/2 cup granulated white sugar (or HG Alternative) 

1/3 cup brown sugar (not packed) 

1/4 cup light whipped butter or light buttery spread (like Brummel & Brown) 

1 tsp. vanilla extract
1 1/2 cups peeled and chopped Fuji apples

1 oz. (about 1/4 cup) chopped walnuts 



Directions:
Preheat oven to 350 degrees. Line a 12-cup muffin pan with foil baking cups, or spray it with nonstick spray. 



In a large bowl, combine both types of flour, baking powder, cinnamon, baking soda, and salt. 


In medium-large bowl, combine remaining ingredients except apples and walnuts, and whisk until uniform. Add to the large bowl, and stir until just mixed and smooth. (Batter will be thick.) Fold in chopped apples.

Evenly distribute batter among the cups of the muffin pan, and smooth out the surfaces. Top evenly with chopped walnuts. 



Bake until a toothpick inserted into the center of a muffin comes out clean, 18 - 20 minutes. Enjoy!

What Are We, Nuts?
As much as we'd love to have apple pie for breakfast, we know better. And while an apple-walnut muffin sounds like a totally sensible option (it's not pie, after all!), it's still likely loaded with excess fat and sugar. The walnuts may have some health benefits, but they also carry a lot of fat when you don't use them in moderation. Factor in the usual muffin suspects -- butter, flour, eggs, etc. -- and things get fattening fast. Huge bummer! But it doesn't have to be, 'cuz it's insanely easy to make a big batch of muffins with a lot of yummy flavor and a respectable calorie count.
