Grilled PB&J
Entire recipe: 257 calories, 10.5g fat, 345mg sodium, 34g carbs, 6.5g fiber, 11g sugars, 10g protein -- PointsPlus® value 7*

This thing is like the love child of a grilled cheese and a peanut butter & jelly sandwich. Future classic ahead...

Prep: 5 minutes
Cook: 5 minutes or less

Ingredients:
2 slices light bread
1 tbsp. reduced-fat creamy peanut butter
1 tbsp. low-sugar strawberry preserves
1/4 cup sliced strawberries
2 tsp. light whipped butter or light buttery spread (like Brummel & Brown)

Directions:
Lay bread slices flat. Spread one slice with peanut butter and the other slice with preserves. Evenly layer strawberries over the PB-topped slice. Top with the other bread slice, preserves side down. Spread the top of the sandwich with 1 tsp. butter.

Bring a skillet sprayed with nonstick spray to medium-high heat. Place sandwich in the skillet, buttered side down. Spread the top with the remaining 1 tsp. butter.

Cook until bread is lightly browned, about 2 minutes per side. Enjoy!

PB Crunch Sundae
Entire recipe: 221 calories, 5.5g fat, 212mg sodium, 35.5g carbs, 3g fiber, 20.5g sugars, 10g protein -- PointsPlus® value 6*

Two types of peanut butter, sweet PB cereal, rich chocolate ice cream... Ahhhh!

Prep: 5 minutes
Cook: 5 minutes or less

Ingredients:
1 1/2 tbsp. light vanilla soymilk
1 tbsp. powdered peanut butter (click for the 411)
2 tsp. reduced-fat creamy peanut butter
1/2 cup fat-free chocolate ice cream
1/4 cup low-fat peanut-butter-flavored cereal (like Jif Peanut Butter Cereal)

Directions:
In a small microwave-safe bowl, combine soymilk with powdered peanut butter. Stir to combine. Add reduced-fat peanut butter, and stir until uniform. Microwave for 15 seconds, and stir until smooth and uniform.

Scoop ice cream into bowl, and top with peanut butter sauce and cereal. Dig in!
