Don't let pumpkins hog the spotlight -- apples deserve some glory during fall too! These recipes are two terrific reasons why... Read, cook, and eat.


Apple Pie Tostadas
1/2 of recipe (1 tostada): 125 calories, 0.5g fat, 84mg sodium, 29g carbs, 2.5g fiber, 15.5g sugars, 1g protein -- PointsPlus® value 3*

We don't always have time to make pie, but we always want to EAT pie. This recipe is a snap!

Prep: 10 minutes
Cook: 15 minutes

Ingredients:
1 tsp. cornstarch
1 1/2 cups peeled and chopped apples
1 tbsp. granulated white sugar
1/2 tsp. lemon juice
1/2 tsp. cinnamon
1/8 tsp. vanilla extract
Dash salt
Two 6-inch corn tortillas
Optional topping: fat-free or light whipped topping

Directions:
Preheat oven to 375 degrees. Spray a baking sheet with nonstick spray.

In a medium nonstick pot, combine cornstarch with 1/4 cup cold water, and stir to dissolve. Add apples, sugar, lemon juice, cinnamon, vanilla extract, and salt. Stir well. Set heat to medium low. Stirring frequently, cook until apples have slightly softened and mixture is thick and gooey, 10 - 12 minutes. Remove from heat.

Meanwhile, lay tortillas on the sheet. Bake for 5 minutes. Flip tortillas. Bake until tortillas are crispy, about 5 more minutes.

Divide apple mixture between the crispy tortillas. Enjoy!

Apple & Onion Stuffed Chicken
1/2 of recipe (1 stuffed cutlet): 212 calories, 4.5g fat, 446mg sodium, 6.5g carbs, 1g fiber, 4g sugars, 33g protein -- PointsPlus® value 5*

Prep: 10 minutes
Cook: 40 minutes

Ingredients:
1/3 cup finely chopped Fuji apple
1/3 cup finely chopped onion
1/2 tsp. chopped garlic
1 wedge The Laughing Cow Light Creamy Swiss cheese
Two 5-oz. raw boneless skinless chicken breast cutlets, pounded to 1/4-inch thickness
1/4 tsp. salt
1/8 tsp. black pepper
1/8 tsp. garlic powder
1/8 tsp. onion powder

Directions:
Preheat oven to 350 degrees. Spray an 8" X 8" baking pan with nonstick spray.

Bring a skillet sprayed with nonstick spray to medium heat. Add apple, onion, and garlic. Cook and stir until softened, about 4 minutes.

Transfer apple mixture to a medium bowl. Add cheese wedge, breaking it into pieces, and stir until it has melted and coated the apple mixture.

Season chicken with salt, pepper, garlic powder, and onion powder.

Evenly divide onion-apple mixture between the centers of the chicken cutlets. Roll up each chicken cutlet over the mixture. If needed, secure with toothpicks. Place in the baking pan.

Cover pan with foil, and bake for 20 minutes.

Remove foil. Bake until chicken is cooked through, about 15 minutes. Enjoy!
