<br>HG's Mega Mushroom Pizza
<br>
<br>Make Room for Mushrooms!  
<br>We were shocked to learn the crazy calorie count on CPK's Wild Mushroom Pizza. What's not shocking? The deliciousness of our lightened-up swap... 
<br>
<br>Prep: 10 minutes 
<br>Cook: 15 minutes 
<br>
<br>Ingredients: 
<br>1/4 cup thinly sliced shiitake mushrooms 
<br>1/4 cup thinly sliced baby bella/cremini mushrooms 
<br>1/4 cup thinly sliced white mushrooms 
<br>1 wedge The Laughing Cow Light Creamy Swiss cheese 
<br>1 tsp. grated Parmesan cheese 
<br>1/4 tsp. garlic powder 
<br>1 high-fiber pita 
<br>1/4 cup shredded part-skim mozzarella cheese 
<br>1 1/2 tbsp. chopped scallions 
<br>
<br>Directions: 
<br>Preheat oven to 375 degrees. Spray a baking sheet with nonstick spray. 
<br>
<br>Bring a skillet sprayed with nonstick spray to medium-high heat. Cook and stir all mushrooms until partially softened, about 2 minutes. Transfer to a medium bowl, and blot away excess moisture. 
<br>
<br>In a small bowl, combine cheese wedge, Parmesan cheese, and garlic powder. Mix until uniform. 
<br>
<br>Lay pita on the baking sheet, and spread with cheese mixture, leaving a 1/2-inch border. Top with mushrooms and mozzarella cheese. 
<br>
<br>Bake until mozzarella cheese has melted and pita is hot and lightly browned, about 10 minutes. 
<br>
<br>Sprinkle with scallions, and cut into slices. 
<br>

<br>California Pizza Kitchen's Wild Mushroom Pizza

<br>Wildly Disappointing… 
<br>With options like Habanero Carnitas and The Meat Cravers on CPK's pizza menu, the Wild Mushroom seems pretty tame. That pizza is packed with mushrooms. (Yay!) But it's also loaded with cheese, and the bottom is essentially a slab of dough. (Boo.) Another problem? CPK's pizzas are small enough to be looked at as single servings, yet large enough that you know they shouldn't be. Just look at those alarming nutritionals: more than a thousand calories! This entrée even has an optional truffle oil drizzle -- it only adds 40 calories, but when the numbers are already this high, there's no need to push 'em any higher. Skip this silly veggie pizza, and make our recipe instead. It's still loaded with mushrooms and cheesy goodness, but it's super slashed in the calorie and fat departments. Now that's a good option...
