Hi Hungry Girl,

What exactly is powdered peanut butter? I've heard it has way fewer calories and much less fat than regular peanut butter. How can that be? Is this stuff made from real peanuts?

Hi PP PB,

I'm obsessed with powdered peanut butter. It really does have a fraction of the calories and fat found in regular peanut butter, and, yup, it's made from real peanuts! And while it is important to have healthy fats in your diet (some of my favorite sources are grapeseed oil, salmon sushi, and dry-roasted almonds), it's easy to overdo it with something as delicious and addictive as peanut butter. That's why I love powdered PB. So here's the deal...

It's made from defatted peanuts, which means that the excess oil has been squeezed out of the peanuts. Depending on the brand, powdered peanut butter sometimes includes a little salt and/or sugar. When you add water to it and stir until smooth, you've got instant low-calorie peanut butter! Just add the water a little at a time until you get the nut butter to the consistency you like best. Feel free to add a bit of salt and/or some sweetener.

Here's how the stats stack up against traditional PB... A 2-tbsp. serving of the powdered stuff has about 45 calories and 1.5g fat (PointsPlus® value 1*). The same amount of regular peanut butter, on the other hand, has about 200 calories and 16g fat (PointsPlus® value 5*). Nutty! Keep in mind, 2 tbsp. of the powder doesn't make a full 2 tbsp. of peanut butter. Once you stir in the water, you end up with 1 - 1 1/2 tbsp. of PB. Ummm... Still super impressive. That means that PB made from the powder has at least 50 percent fewer calories and 80 percent less fat than regular peanut butter. WOW.

Spoonable peanut butter's not the only thing you can make with it! Powdered PB is a great way to infuse any food with rich PB flavor without adding a lot of calories. Add it to muffins, shakes, sauces, cakes, pancakes, oatmeal... Pretty much anything! You can also turn it into low-cal peanut butter, and use that in any HG recipe that calls for reduced-fat peanut butter... You'll save even more calories!

Wondering who makes it and where you can get it? Two mega-popular brands are PB2 (made by Bell Plantation) and Just Great Stuff (by Betty Lou's). Both of those come in chocolate and regular varieties, and Just Great Stuff also has a protein-boosted version with 8 grams of protein per 2-tbsp. serving! You can find both brands in select supermarkets -- especially natural-food stores -- but your best bet is to order online. This way, you can scope out deals without driving all around town. I'll let you know the second they hit shelves...

And just when you thought things couldn't get any better... There's peanut flour! I started playing around with this stuff recently, and it's my new PB obsession. The stats are pretty much identical to powdered peanut butter, and it works exactly the same way, if not better -- the texture is perfect. The big bonus? It's often cheaper (ounce for ounce) than powdered PB. That rocks! Peanut flour is still a little hard to come by in stores, so it's definitely worth ordering online. My pick? Protein Plus Gluten-Free Peanut Flour over on Amazon!
