October is Vegetarian Awareness Month. And these amazing, guilt-free

veggie recipes will please EVERYONE -- even die-hard meat lovers. We

promise...





Southwest Burritofest!

(1 burrito: 190 calories, 5.5g fat, 772mg sodium, 39g carbs, 20.5g fiber, 4.5g

sugars, 14.5g protein = 3 Points)



The second we first bit into this black bean patty during our Gardenburger

taste test, we had fantasies about this burrito!



Ingredients:

1 Gardenburger Black Bean Chipotle Veggie Burger

1 La Tortilla Factory Whole Wheat Low-Carb/ Low-Fat Tortilla; Large Size

1/2 cup shredded lettuce

2 slices tomato

1 tbsp. fat-free sour cream

2 tbsp. salsa

hot sauce (optional)



Directions:

Microwave or grill your veggie patty according to the directions on the box

(we prefer ours grilled...with nonstick cooking spray, of course!). Spread

sour cream on your tortilla. Cut veggie patty into bite-sized pieces or strips.

On one half of the tortilla, place lettuce, tomatoes, and veggie patty pieces.

Top with salsa, and roll up your burrito. If you're brave, add some hot sauce.

‘Meaty’ Thin Crust Pizza

(Entire pizza: Approx. 260 calories, 5g fat, 1,200mg sodium, 35g carbs, 20g

fiber, 9g sugars, 25g protein = 5 Points)



This crispy, fiber-rific, protein-packed pizza will please veggie-mongers and

meat eaters EVERYWHERE! Eat one to celebrate National Pizza Month (there

are only a few days left!).



Ingredients:

1 La Tortilla Factory Whole Wheat Low-Carb/ Low-Fat Tortilla; Large Size

1/2 cup fat-free tomato sauce

1/2 cup Morningstar Farms® Meal Starters™ Grillers or Sausage Style Recipe

Crumbles™

1 1/2 oz. shredded fat-free mozzarella cheese



Directions:

Preheat oven to 375 degrees. Thaw crumbles in the microwave for 30

seconds. Bake tortilla for 5 - 6 minutes on each side, or until slightly crispy.

Remove tortilla from oven and spread on tomato sauce. Next, sprinkle on

crumbles and top evenly with cheese. Return pizza to the oven for

approximately 5 minutes, or until cheese has melted. Use a pizza cutter or a

sharp knife to cut into slices.

My Big Fat Greek Pita

(Entire pita: 205 calories, 1g fat, 485mg sodium, 43g carbs, 12g fiber, 10.5g

sugars, 15g protein = 3 Points)



This filling pita pays homage to Greek cooking (without all the oil!). HG Tip!

If you can find it, a little bit of fat-free feta works GREAT with this recipe...



Ingredients:

1 Western Bagel Alternative Pita

2 oz. Fage Total 0% Greek Yogurt

1 small onion; sliced

1/2 cup sliced red and green peppers

2 cups fresh spinach

1/2 cup halved cherry tomatoes

salt, pepper, oregano, and garlic powder

red pepper flakes (optional)



Directions:

In a small dish, combine yogurt with salt, pepper, oregano and garlic powder

(season to taste). For some added spice, add red pepper flakes. In a skillet

sprayed with no-cal cooking spray, cook onions and peppers over medium

heat for 5 – 7 minutes. Add spinach and tomatoes, and cook until spinach

leaves have lost their volume. Remove from heat, and mix veggies with

yogurt sauce. Cut pita in half (toast if desired) and stuff with veggie

mix.
