1/4 cup thinly sliced shiitake mushrooms
1/4 cup thinly sliced baby bella/cremini mushrooms
1/4 cup thinly sliced white mushrooms
1 wedge The Laughing Cow Light Creamy Swiss cheese
1 tsp. grated Parmesan cheese
1/4 tsp. garlic powder
1 high-fiber pita
1/4 cup shredded part-skim mozzarella cheese
1 1/2 tbsp. chopped scallions

Preheat oven to 375 degrees. Spray a baking sheet with nonstick spray.

Bring a skillet sprayed with nonstick spray to medium-high heat. Cook and stir all mushrooms until partially softened, about 2 minutes. Transfer to a medium bowl, and blot away excess moisture.

In a small bowl, combine cheese wedge, Parmesan cheese, and garlic powder. Mix until uniform.

Lay pita on the baking sheet, and spread with cheese mixture, leaving a 1/2-inch border. Top with mushrooms and mozzarella cheese.

Bake until mozzarella cheese has melted and pita is hot and lightly browned, about 10 minutes.

Sprinkle with scallions, and cut into slices.
